MIL makes veggie trays 1-2x a month for our weekly dinner, so we bring home extras and eat it with dip I like it raw, don't like cooked too much. the cf mac n chz sounds delish tho!

No! But we ate some frozen tonight. It was the steam bag kind and garlic flavored. It was delish!

yes! I had no idea how delish it was until a couple years ago. Now we make cauliflower mash and roasted cauliflour relatively often. I love doing "healthy" shepards pie with cauliflower mash and ground turkey. My friend makes gluten free pizza with a cauliflower crust that looks intriguing, too ... but I haven't tried that yet

I've been putting it in a lot of dishes recently because DS is in a phase where he will eat white foods consistently. If you add colorful ingredients, they might get spit out at you.

Nope. For some strange reason DH hates broccoli and cauliflower. It's too bad because I like them. We never cook it at home though.

It's really good for you. Conciferous veggies help prevent cancer. We eat broccoli and cabbage a lot too.

Cauliflower is one of my least favorite vegetables. I eat pretty much all veggies but I wouldn't choose it if given any other option. I'm skeptical of all the new fad hidden cauliflower alternative recipes. Cauliflower never struck me as being particularly healthful though I suppose it is. I'd rather eat something green! We eat a ton of broccoli.

Yes! DH usually roast them in the oven w/ olive oil, so good! And he makes this cauliflower casserole w/ cheese & cream of mushroom. We also used one of Nom Nom Paleo's recipe for cauliflower fried rice; delicious!

We love cauliflower (especially roasted & crispy), but its really expensive here most of the time. Can't wait for the farmer's market in the summer when we can get a bunch for cheap!

@looch, it's really good if you roast it with tons of garlic, some salt and pepper, and olive oil. I like to grate a little lemon zest on top and add parsley and parmesan if i'm feeling fancy, too (add it at the end, though, otherwise it burns)

@blackbird: do you find that you have to parboil it before you roast it in the oven?

@looch, nope. I chop the florets so it's not a massive chunk, though. It takes a good 30 min. I have to stir often, too.

I'm a fan of it, but don't get to eat much of it at home bc DH isn't a fan of veggies. But now that DS is here and loves veggies, I'm adding it to our weekly grocery list. Yea!!

it's charlie and olive's favorite veggie lately so i make it once a week. salt, pepper, garlic, olive oil and roast at 425!
