It's best when the chef has already added the wasabi. Proper etiquette is not to dip in soy sauce + wasabi because that's saying that the chef hasn't seasoned the sushi correctly. But if we're talking about your run of the mill sushi joint down the street, then it probably hasn't been seasoned correctly! Sigh, I can't wait to eat some really good sushi after this baby comes, enough talk about sushi etiquette!!!

for nigiri, i like it when it's already been added between the rice and fish (except one place that loads it up and the vapors shoot up my nose and makes me cry).
for sashimi, yep. just a little. for flavor and wasabi's magic.
for sushi rolls, i'd say never since they're usually already pretty flavorful.
