DH and I have been talking about investing in a DSLR for a while now and I think I've narrowed down my starter to the Canon Rebel t3i or 7D body and Canon EF 50mm f/1.8 II Camera Lens...
I got the suggestion from a photog friend... but wanted to hear back on those bees that may have a DSLR that they absolutely LOVE for their LOs/family/etc.
I'd also like to know what is the best option as far as canon bodies for lightweight'ness

I have the Canon T1i, so I would suggest the Canon T3i, just because I know how easy my body is to use. I would definitely get the prime lens, It is my go-to everyday lens now (I sold my kit lens the camera came with). On the other hand, a friend of mine has the 7D and she loves it. I think the big question is cost - what are you willing to spend? I find mine works just fine for my personal use. I never plan to do anything professional with it.

i have the canon rebel xti (bought years ago, so not sure what's the latest version) and the 5d mark ii. 5d is not a starter camera but i really enjoyed the rebel for a starter camera.

the latest entry level canon dslr is always a good bet. they're light and easy for women to use.

I love our Nikon D5000-- it's small and lightweight. We purchased just the body and a prime lens, and we now have a zoom lens as well, and two flashes. Rob Sr. can talk a lot more about this! All I know is that it's small (for a DSLR) and light!

I have the Canon T2i and I love it. I love the 50mm f/1.8 lens too, so I definitely think you should go with the Canon T3i.

We have a Mark 5D. It's heavy, but I love how it feels in my hands.

We have a Nikon D300 and LOVE it. The Nikon D800 is about to be released (which sounds like it's going to be a pretty fantastic camera), and it looks like Nikon is starting to discontinue the D300 and D700 models, so you may be able to get one for a steal. Really, you can't go wrong with a Canon or a Nikon DSLR.

I have great respect for Canon and Nikon, but I am a real Olympus fan!
I use the Olly E-420 because of its size, very small and lightweight, but gives me just as good photos as any of the other full sized DSLR's, and I can still use multiple lenses.
I really shopped around for a new DSLR after switching from a film SLR, and this one felt right in my hands being smaller and lighter, it means I carry it around more and actually use it.
One note- it does not have video, but I also have a very small point and shoot that I use for that and when I want a quick snapshot and not worry about lighting.

I have a Canon Rebel and the 50mm 1.8 prime lens. While I love the pictures with the 50mm, I sort of feel like on a cropped sensor (which the Rebels have), you have to back up an unnatural distance to get the right composition for portraits, at least indoors (which is what the 1.8 is good for - low light). For Christmas I got the Tamron 18-50 2.8, and although it's more expensive, I also think it's more versatile.
If you're just starting out though, I think the 50 1.8 is a good bet - it gives you the most bang (quality-wise) for your buck.

I have a canon rebel xsi and I love it. Getting a DSLR really improved the quality of my photos, so I think the t3i would be a good choice.

I'm on my second Canon Rebel, the T2i and love it as well... So i'd say go for the T3i! I also have the 50mm 1.8... Great value for the price. I did splurge later on and got the 1.4 too which I absolutely love.
