I bought some veggie trays for the first few weeks. I didn't have time to chop my own celery and broccoli and stuff but I didn't want to eat a bunch of junk either. It was really nice!
And if you have unexpected visitors, just pop the lid off and throw it on the table!

Honey mustard chicken is a go-to for me. Mix 1/2 cup honey, 1/3 cup of mustard, and 2 Tbsp. lemon juice together. Pour over cut up chicken parts (you can do boneless skinless or not and all one kind or a mix of breasts, legs, thighs, whatever) in an oblong casserole dish. Bake at 350 for 1 hour or until chicken is tender, basting occasionally. Serve with rice and a vegetable and you are good to go.

Buffalo chicken in the crock pot. Cover chicken breasts (we usually use three) with franks red hot sauce (either buffalo or original cayenne) and a packet of dry ranch dressing. Cook on high for 3 hours. Shred chicken and serve on rolls or over salad.

Having taco/mexican fixings ready-to-go worked great for us. You can have tacos, salad, a big burrito, nachos, whatever - they all have the same ingredients really.

Chicken is always easy, you can just throw anything on it (salad dressing, bbq sauce, etc) and bake. Tacos are also super quick. Have you thought about freezing crock pot meals? Then you just have to defrost and put in the crock pot.

@pelikila: oh my gosh, that sounds so good and so easy! LO isn't here yet but I'm always looking for super quick but healthy stuff to make and that is definitely going to be tried soon -- maybe even tonight!

Grilled chicken (with any number of spice/flavor rubs), cous cous (from a box or just bulk, easiest carb ever), and any steamed veggie or salad.

If you have a Trader Joe's near you, they have a lot of great frozen meals that are not like "frozen casserole, again?". Some really good flatbread pizzas (regular types plus fun stuff like truffled mushroom or ham, guyere and caramelized onions) you can have with salad.
Other stuff we ate right after LO was born: Indian (just cook rice and simmer curry sauce with tofu/chicken), salmon or mahi-mahi burgers, big quinoa or farro salads you can munch on for days, dressed up soup/chili (top with avocado, cheese, etc.), broiling fish only takes about 10 minutes, whole roasted chicken from the market - chicken one night with a veggie and salad and chicken salad with the leftovers.
One of our favorite ways to have spaghetti is just with olive oil and garlic and red pepper flakes. Super fast and easy, really tasty.

I really like frozen chicken, hot bbq sauce and pineapple in the crockpot! Cook for 6-8 hours on low... sweet and spicy

This is tough for me because my DH has a very delicate stomach so most frozen meals are a no-go for us since they are typically pretty high in sodium and if they aren't then they just taste bad. If I want to feed us something healthy and easy I buy fresh grilled chicken from my deli counter and a bunch of fruit/veggies and serve it over lettuce. You don't even have to do a great job chopping things because it can be cut as you eat.
