If you're allowed to make desserts brownies or no bake cookies. Depends on how you feel about turning the oven on. We have a potluck 4th picnic and I'm lame and am bringing a veggie tray and chips because we're currently renovating our kitchen so only things that can be bought and chopped over here.

I cut up a seedless watermelon (into triangles because they're easy to pick up and no utensils necessary) for my work family picnic. It was a hit (especially with the kids).

@lawbee11: I'm takin watermelon to the second picnic... Chloe & I are cutting them into stars and putting them on skewers with strawberries and blueberries!
I'm actually taking 5 dishes to picnic #2. The other picnic was a last minute invite and further away.

Chips and guacamole
Chips/pita and hummus, olives, etc.
Cold sesame noodle salad
Cold pesto pasta salad
Veggie with interesting dips
Cole slaw (traditional might need a fridge but a non mayo based one should be fine!!)

@Mrs. Jump Rope: bacon-wrapped little smokies or hot dogs cut into thirds, covered with brown sugar and baked?
crab ball - can of crab, mix with cream cheese, cover with cocktail sauce, serve with wheat thins

My go-to picnic dish is skewers of melon, prosciutto and mozzarella balls, drizzled with pesto. I usually buy the canteloupe and honeydew pre-cut at the grocery store to save even more time. The prosciutto I cut into strips and then slide accordion-style onto the skewers.

@MsInformation: oh my gosh that sounds amazing. I fell in love with melon and prosciutto combinations when I was in Italy - so delicious!

@Coopsmama Yes, it's a super delicious and somewhat unexpected combination. I tried these skewers at a friend's house years ago and have been bringing them to picnics ever since. I'm going on a picnic with this friend in a few weeks, though, and feel like I should find something else to bring. =)

Also pasta salad, tortilla rollups/pinwheels, or fruit salsa with Stacy's cinnamon/sugar pita chips. All are things I'm taking this weekend Fruit and fruit dip is easy enough too, which is also being taken to a brunch!

My friend's go-to salad is so easy - its just orzo tossed with cherry tomatoes, chunks of mozzarella, jarred pesto, olive oil, and some vinegar or lemon juice. People can't stop eating it!
Also, this might not be great for a crowd, but what an easy/obvious thing to do for watermelon salad! You can probably even assemble on site!
