I've had eggplant parmesan; that was tasty and didn't seem to be harder to make than chicken parm.

Mmmmm I love eggplant!! I do an appetizer where I slice a peeled eggplant into half inch thick slices. I dip each slice in an eggwash and then in breadcrumbs (I usually buy the italian flavored breadcrumbs). I then bake the slices at 350 for about 20minutes... or until they look browned and done. Then I place a slice of fresh mozzerella on top of each eggplant, and a slice of fresh tomato on top of that. Drizzle with olive oil and enjoy! My husband doesn't really like eggplant either but he loves this!

This eggplant parmigiana recipe is fantastic! It's from Scalini's and is supposed to make you go into labor. I tried it during my 39th week and it didn't work but it's really yummy! I could do without the crushed red pepper in the marinara though.

The only thing I've cooked at home is Eggplant Lasgna. I cook it like any lasgna recipe, but instead of the pasta I use slices of eggplant instead. Our recipe calls for lots of veggies in the marinara sauce and we top it off with banana peppers, delicious!
I also love the eggplant curry dish at our local thai rest.

My mom makes an eggplant dip. And I have a friend who makes eggplant parm. But I don't eat eggplant.

Eggplant and tofu is really good.
Eggplant parmesan is really good too.

I made moussaka with eggplant last week and it was really good. It was hard to tell there was even eggplant in it.
