I would try making Deviled Egg Pasta Salad (recipe below), pasta with asparagus and a poached egg, or one of my favorites is roasted veggies and couscous with a fried egg on top of the couscous.

I hate eggs except just whites scrambled, haha. But I have seen some fun looking pizzas with an egg cracked on them at the last minute- so if you ever make your own (oo on a grill even!) that might be good? Also what about over a salad- I think those are generally poached? Or hard boiled and chopped and added.

We make omelets for dinner sometimes; we try to dress them up a little so they go with a big salad and make it more dinner-like and less breakfast-like.
Some of our favorite combinations are: pesto/shrimp/goat cheese, caramelized onions and goat cheese, fontina cheese and spinach, lobster.

Frittatas definitely (you can put anything in them, I like potatoes to make them more filling!). I also really like zucchini or summer squash fritters.
