@plantains: DH just did this a couple weeks ago when we had a cookout. It was so good! I am not sure he will have time on the 4th though cause he is running a race that morning. But we are having another get together the next day it would work for!

Brats (!)
Cheeseburgers (maybe slider-style, so people can have a little of everything?)
Potato salad
A good dip or two (like a layer dip and/or a spinach dip)
Brownies
Cake/Pie
ETA: Not everything needs to be homemade!

I'm a big fan of dips, snacks, and pasta/potato salads for get togethers. Burgers and hot dogs are always a good idea too!
This is what I'd serve:
-Burger/hot dog "bar" (just grill the patties/dogs, then let people assemble themselves)
-Buffalo chicken dip with tortilla chips
-Spinach dip in pumpernickel bread bowl with bread chunks for dipping
-Potato chips (salt and vinegar, yum)
-Pasta salad
-Black bean & corn salad
-Cheesecake bites and apple pie
And I'd buy the spinach dip mix, the pasta salad, and the desserts pre-made. Could make the dips the day before too. The easier, the better!

Pulled pork sandwiches (in the crock pot)
BBQ chicken (on the grill)
Beer brats (on the grill)

We either do grilling (hamburgers/hot dogs) or sloppy joes in the crock pot.
Lots of dips, salads, fruit salads, veggies, ect. With strawberry shortcake, cookies, fruit cake, ect. I love fresh stuff for the fourth!

We always have a 4th BBQ at the family's house....the menu is usually the same....Brats with tortilla's (not buns), my Mom's potato salad, chips and dips, fruit & veggy tray's....and some form of dessert like cake and what I made last year fruit & brownie Kebabs (small piece of brownie, blueberry, strawberry and a marshmallow). They were SO yummy!
Plus of course BEER!

Last year for the 4th we did "BBQ Sundaes" served in mason jars. Layer BBQ, sauce, slaw, baked beans, and potato salad in the mason jar, and enjoy! Feel free to add your favorite BBQ side to the mix - potato chips, pickles, etc. There are no wrong answers!

One container or marshmallow cream and strawberry cream cheese mixed together. Dip ripe peaches or strawberries in it...yum!
