French toast, waffles, omelets, seasoned potato wedges, quiche, etc. I just went to a bridal shower brunch and they had breakfast things but also fish, vegetable medley, and other foods that weren't breakfast-y. My plate looked weird with the breakfast/non-breakfast mix of foods but my tummy was happy.

Whenever I host brunch I usually serve:
Baked French toast - for pioneer woman
Crock pot breakfast casserole - hashbrowns, sausage, eggs, cheese and green onions
Spinach and feta quiche
Fruit salad
Smoked salmon and bagels

Bacon! Quiche.
Lemon poppyseed bunt cake. If its a special occasion I'll do homemade whipped cream or creme fraich and berries.

My favorite is sausage biscuit casserole! You use canned biscuits to form the bottom crust. The "filling" is beat eggs with sausage, cheddar cheese, and spinach! My favorite!

Love brunch!
The only thing I have to add (that went over really well as DS's bday party) is fruit and yogurt parfaits with granola. We bought plastic champagne glasses from the dollar store and made them (minus the granola) the night before.

when I'm out to a restaurant or dh is cooking, I love poached eggs for brunch! but that's hard when cooking for multiple people. Also, I'm pregnant now so now poached eggs for me
I've made this "24-hour omlette" for a brunch party before and it was a big crowd-pleaser! A little heftier than a quiche
24-hour Omelet
1 loaf challah or other rough textured bread, such as 1/2 challah, 1/2 whole wheat
8 eggs
1 lb. shredded cheese (you choose flavor - swiss, cheddar, jack, etc.)
4/3 lb. sliced mushrooms
1 large onion chopped
1 green or red pepper chopped
2 cups milk
1 stick melted butter or margarine (made of veg. oil)
3/4 teasp. dry mustard
1/2 teasp. salt
1 Tablesp. chives or chopped green scallion and go liberal
dash of pepper
Tear bread into chunks and spread evenly in 13 x 9 rectangle cooking pan coated with non-stick spray.
Pour melted butter/marg. over the pan. Sprinkle with the grated cheese. Sautee veggies with olive oil and spread over cheese.
Beat together eggs, milk, and rest of seasonings & pour egg mixture on top of pan. Cover with foil and refrigerate overnight.
Bake covered with foil at 325 Degrees for 50 minutes. Uncover and cook til slightly browned, another 10 minutes.

@mrskc: it's from iowagirleats. She had lots of good recipes. I've made this several times and it's super yummy and makes a ton. I serve with different kinds of salsa
Crock Pot Breakfast Casserole

Serves 12
Barely adapted from Jimmy Dean
Ingredients:
30oz bag frozen hash browns
1lb sausage, browned & drained
8oz shredded cheddar cheese
8oz shredded mozzarella cheese
6 green onions, sliced and divided in half
12 eggs
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
Directions:
Spray a large crock pot with non-stick spray then place half the hash browns into the bottom. Layer in half the cooked sausage, half the cheeses, and half the green onions, then repeat hash brown, sausage, and cheese layers.
In a large bowl, whisk together eggs, milk, salt, and pepper, then drizzle over top. Cook on high for 4 hours, or low for 8 hours, or until eggs are set. Serve with remaining green onions, salsa, or guacamole.
