I'm in the mood to make a casserole for dinner tonight. Any recipe suggestions?

I don't make many casseroles, but this baked orzo dish is a favorite in our house. It does take some prep, though.

I love casseroles around this time of year, they are so comforting! I like Tator tot casserole, tuna noodle casserole, and chicken and stuffing casserole the best! I know they kind of sound a bit on the unhealthy side, but I make substitutions that kind of help that area out!

Tater tot casserole!!!
Brown 1 lb turkey (or beef) with onions, season with salt/pepper/garlic.
Poor in 9x13 pan, cover with 1 can cream of mushroom and 1/2 cup sour cream. Mix together
Layer with one can drained corn
Layer with two cans French cut green beans
Layer with shredded cheddar cheese
Layer with frozen tater tots until the top is coveredBake at 425 for 25 minutes

This one is yummy: http://smittenkitchen.com/blog/2013/09/baked-pasta-with-broccoli-rabe-and-sausage/ . I used either kale or Swiss chard instead of broccoli rabe because that's what I had in the fridge, but otherwise followed the recipe.
I also like http://www.thekitchn.com/chicken-divan-casserole-from-s-129235 -- I have fond memories if chicken divan from childhood but can't bring myself to use all the canned glop it usually calls for, so I tried this version. I did add in a few tablespoons of mayo to the sauce and would recommend doing so for the flavor. It was delish!
