It's not a cocktail but I love a glass of champagne and a scoop of sorbet in it. Yum! Raspberry sorbet is great.

The keys (IMO) are to use simple syrup - not straight up sugar that won't actually dissolve properly in the cold liquid, and to gently muddle the mint leaves. They take a few minutes to make right, but are so worth it.
Other great summer cocktails I like are:
Gin Rickey (ice, gin, Rose's Lime Juice, seltzer water)
Gin and tonic
Gimlet (very refreshing) - it's just gin and Rose's Juice. The description from the Raymond Chandler novel The Long Goodbye stated that "a real gimlet is half gin and half Rose's lime juice and nothing else" - that's where I first read about it, tried it and loved it. Shake it up hard in a cocktail shaker with lots of ice, strain into a martini glass and enjoy.

I drink a lot of simple stuff, but I have a weird and amazing margarita recipe. In the summer, I like shandies, gin and sprite, margaritas, palomas....

Margaritas too. I usually do a house mix-over ice (on the rocks) lime juice, Cointreau, agave nectar, tequila! -
I'm usually a pretty simple drink kind of person- beer, vodka martini, or gin & tonic. But we also make a version of The Bee's Knees sometimes
You need a not-very-junpiery, sweeter kind of Gin. We use some local stuff (Barr Hill Gin), but there are other brands that work.
I make lavender iced tea, and sweeten it with a little honey. Add the gin, a little soda water or tonic (I prefer tonic, others not so much), and a squirt of lime. It is so refreshing! -
My favorite drink for summer is Bombay Sapphire mixed with Sprite with a twist of lime. If you want less calories, Sprite Zero works great too!

I have the easiest margarita recipe. And it's so delicious. And strong! Haha. Which makes it even better.
1 can of frozen limeaid
Then fill that can with water, then tequila
1 bottle/can of light Mexican beer.Stir and serve over lots of ice! Yum yum.

@BananaPancakes: I love how stupidly easy it is! Even after you've had a couple, you can make more without messing it up, haha. I made it for spending the day at the pool with all the cousins and it was a huge hit.

yummm I am adding all of these to my list.
For tonight (to celebrate DH and J being home!) I decided on strawberry margarita- just strawberries, lime juice, triple sec, tequila and ice! I'm excited
