I need to sign up for a meal train for a neighbor that had their 2nd. I am blanking on what to make, which will determine when I sign up.

It was a nice break from lasagna for breakfast.

Probably won't help, but my best friend picked up Olive Garden and a bottle of wine and delivered it to us. It was definitely my favorite meal and so sweet of her!

Roasted chicken with roasted veggies and fresh, still warm chocolate chip cookies!!!

I always focus on snack and lunch stuff instead of dinner because I had the hardest time feeding myself during the day and in the middle of the night. I needed fast, neat, nutrient dense foods, so for my PP friends, I made things like:
- Fresh cut fruit
- Dry sandwiches (just meat and cheese or hummus and shredded carrots, or PBJs) on whole wheat cut in half - they keep for days!
- Hard boiled and peeled eggs.
- Ants on a log
- Muffins
- Breakfast burritos
As for actual meals, lots of people are going to bring pastas and casseroles. I may go with something a little different, like meatloaf and mashed potatoes with a salad, or a taco kit with taco meat of choice, tortillas, a bag of shredded lettuce, cheese, salsa, and guac - and maybe a 6-pack of beer!

Really nicely cooked chicken and some sort of veggie side - I don't even know what it was and I'm a horrible cook but it tasted so good. She also sent fresh baked bread, homemade soup and salad. (My husband picked it up in his way home).
One night she stopped by with hot chilli and nachos. I barely knew her at the time (our husbands work together) but it was so freaking amazing and nice of her.

Homemade pizza - we got so tired of papa J's!
pizza was always nice since I could eat it while simultaneously feeding the baby.
Rotisserie chicken and some microwaveable sides
Cold cuts/yummy bread/veggie tray/bag of chips/trail mix-that could cover several lunches.

We had so much chicken and casseroles. Then someone asked what we actually wanted and I said sushi or pizza. Pizza won and it was amazing!
I also had a hard time with lunch/breakfast. So breakfast breads, cold cut trays, and granola bars were also really helpful.

@oliviaoblivia: @Autumnmama79: @gingerbebe: They are asking for dinners. Supposed to be delivered between 5:30-7:00. Cause I did think about something other then a dinner.
@gingerbebe: Taco's would be super easy!

Anything that could be eaten one handed! Our favorites were empanadas I)that I think were loosely based on this recipe (https://foodfolio.net/recipes/30024/chicken-empanada-with-chorizo-olives-smitten-kitchen/) and we made our own burritos ahead of time based on this recipe (http://www.thekitchn.com/recipe-makeahead-roasted-vegetable-burritos-recipes-from-the-kitchn-200281)

@Smurfette: Chili with fresh buns or bread? Would keep well for several days.

My favorite was macaroni and cheese cupcakes. She mixed some veggies and sausage in too. So they were tasty, sort of healthy, could be eaten with one hand cold if need be, and I froze the extras for future lunches and dinners.

@Autumnmama79: That is an idea. I have an extra crock pot too so then they can just eat that night when it is good for them.

@Smurfette: That would be an extra nice gesture to have it in a crockpot so it could keep warm! I like chilli bc its inexpensive, healthy & easy

My mom brought me prepared chicken breasts (grilled) and baked salmon filets...plus the fixing for a yummy salad. It was great for lunch and dinner!
I think now I would probably do like an assortment of prepared separates...cut up fruit, some yogurt, granola, cut up veggies, grilled chicken breasts, salad container, roasted veggies and maybe a take-and-bake loaf of bread?! Healthy options for her to assemble as needed?!
@rachiecakes: OMG Border Cafe...my preggo belly just died and went to heaven dreaming of Border Cafe...was one of my top faves from my 3 years in Boston. Now all I can do is think about the food I love in Boston and cant have!!!

@Autumnmama79: I signed up to bring Skinny Taste's chicken taco chili. Really good, healthy, and easy. Will make some homemade brownies to level it off. I signed up for the 7th, which I just realized is the Super Bowl, so that is good super bowl food too.

a tub of chicken salad (made with greek yogurt instead of mayo) It was a quick, easy and a healthy lunch for a couple of days. It was much needed after a lot of gross take out! I think I have the recipe if you want it!
On the non-healthy side, someone sent us wicked good cupcakes in mini mason jars. omg. amazing.

I loved all of it. A mild yellow curry with potatoes stands out in my mind- my landlord and his wife brought that and another dish by. Oh- my mom brought a ton of calzones. We could freeze them and pull out whatever we wanted for dinner. She brought by a bunch of salad stuff, too.
