I just made split pea soup tonight and was surprised how easy it was- I bought a bag of dried split peas, boiled them for about an hour in chicken broth and water, added a bag of frozen mireproix veggies, the remainder of some honey baked ham, boiled another 30 minutes, mashed everything with a potato masher, seasoned with lemon juice, garlic, salt, and pepper.
Other than budgeting the time it seriously was the easiest soup I've ever made- I thought it would take much longer to cook!

I have a cauliflower-cheddar soup that is really good. Chicken tortilla is also delicious, as is homemade french onion

I always make vegetable beef or vegetable chicken soup because you hit all the food groups (protein, veggies, carbs) in one pot.
