Microwaved frozen mini meatballs. Grapes cut in half. Cubes of cheddar cheese. Berry yogurt pouch for "dessert." <--- LO1's dinner tonight. It covers most food groups, he loves it, and it's the easiest prep and cleanup.
With a newborn in the house, I call all easy meals that my toddler happily eats a win. Chicken nuggets. Fruit for days. Toast. We aren't being fancy or encouraging unwanted veggies right now

Soup with the broth drained. Ground turkey with steam in bag veggies - throw pasta sauce on it to spice it up .

Mine digs deli turkey straight out of the container. I put that, some green beans from a can, and a cheese stick in a plate and call it a day.

We are on vacation right now. C has had cheese sticks and pouches for almost every meal. She's getting veggies in the pouches and protein and calcium in the cheese so I am not worried!
Also microwaving frozen meatballs and frozen mixed veggies or peas. She eats all of these by herself, no spoon feeding required.

Boil some pasta, throw in frozen peas during the last 5 minutes. Grate cheese over it and serve.

Deli turkey, cheese stick, fruit cup, and steamed veggies (and if I'm really lazy the veggies get left off since she doesn't eat them anyway.) I'll also throw down applesauce/yogurt instead of fruit if we are out. She loves this meal and it's easy.

TJ also has really good frozen fried rice with veggies. When I'm feeling like "cooking" I just cook an egg while heating the rice and veggies.

Sandwich with hummus and avocado. I really like them too. If you want to cook something, a little burrito with hummus & cheese (amazing).
My baby is also happy with black beans + cashew cream.
On weekends, I'll make a batch of little savory pancakes (with veggies inside), and freeze for the week. 30 seconds in the microwave. I'll put some butter or cashew cream on them.

I make a batch of mini turkey burgers. Put 1/2 small onion, a tiny zucchini, and a small carrot in the food processor and pulse until they're cut into tiny pieces, drain in a mesh strainer, then mix with 1 lb ground turkey and some herbs and spices and/or a dash of salt and pepper (optional). Form into small patties and bake at 350 for 10-15 minutes, depending on the size you make. Cool and then freeze. Microwave for 30-45 seconds until thawed and warm when you're ready to use them. It's a little bit of work upfront, but I usually get like 20 burgers to freeze so it's worth it to me!

The easiest of easy is PB&J, cheese, blueberries, and peas from a can. No cutting and no cooking.
Hot dogs and grilled cheese are easy favorites as well but require a small amount of cooking.

I but Aidell'a organic meatballs and give those with frozen steamed veggies.
Or I buy roast chicken from the grocery store and give that with frozen steamed veggies.

Tortilla sushi - roll hummus and shredded carrots, cheese, or some lunchmeat into small pinwheels. The hummus acts like a glue. Or you can make a PBJ version by using peanut butter as glue, and you can add some bananas or raisins if you want. Slice it up into small pieces like sushi.

We do quesadillas, pb&j, grilled ham and cheese, yogurt, steamed froz veggies, precooked chicken sausage that I brown on the stove, deli meat, cheese sticks, cut up veggies and hummus with crackers.

@winniebee: I used to make homemade "spaghetti-ohs". Basically ABC pasta (or whatever pasta) with extra veggie sauce. Then I would freeze in glass bowls. Microwave it and serve!
