I've been toying with the idea of making french macarons. I think macarons are the next cupcake and there isn't a good place to get them in my city (yet). But all I ever hear is that they're incredibly difficult to make! Have you ever tried to make one?

I've taken a macaron-making class in NYC! it was so fun. Made it at home myself a few months later... They didn't turn out as perfectly, but were still yummy. They are definitely delicate pastries and when they come out as they should, you know they are made with lots of care, attention to detail, and experience. I love the challenge of making them... But I haven't made more attempts since having #2. On my "to do list" though!

Yes! They were yummy, but definitely not as perfect as the professionals'. Getting the texture exactly right is tricky, I think it took me about 3 tries for it to be close enough to bake properly. Go for it!

@mrs. wagon: I loooovveee French macarons - there is a place in beacon hill to get them, a chocolate shop, I can let you know the name, can't remember now.... There is also a place in the south end that sells them, but the beacon hill place is better!

Umm, it's been a while but from what I remember:
-make sure to ground the almonds really really finely
-don't over-beat the egg whites
-don't bake for too long...they will set as they coolI think I used the recipe from Annie's Eats (just the basic chocolate ones which are supposedly the easiest). I've also read good things about David Lebovitz's technique.
