I only make them when someone gives me cukes from their garden (since I don't like them any other way), but I pickled green beans and jalepenos from my garden last year. Are you canning or just refrigerating?

My mom makes awesome pickles! I've been meaning to get her recipe.

@redsmarties: I did that and liked how they turned out! I like that the fresh cukes are crunchier than the store ones and look less artificial.

I love pickles! I've never made them, but looking forward to your results.

@blackbird: @mrbee: A bit of trivia.... the word pickle comes from a Dutch word that means brine.

Here in the UK, pickle refers to the vegetables preserved in vinegar/brine but it also refers to chutney. I've made chutney (but never the other sort of pickle!)

Oh interesting. I'm only familiar with the kind you can in boiling water, which requires vinegar to preserve them

How do you make these non vinegar pickles??

@mrbee: I haven't but a deli nearby does and they're hands down the best pickles I ever had.

We never had any luck using the lacto-fermentation method for pickles...they always ended up molding and getting disgusting instead of pickling like they were supposed to. Hopefully you have better luck since you make so much kimchi. We can a ton of cucumbers from our garden every year....made over 20 quarts of pickles last year but always with the vinegar based brine.

@mrbee: I can't remember for sure...it's been a couple years since we tried it. I think it was close to a week. We were following a recipe. Lid was on and in a cool/dark place. But they molded and got slimy instead of pickling. So we gave up on doin it that way and just use the hot pack canning method.
