I have a bunch of potatoes and we usually have baked or mashed but I'd like to try french fries this time, except I've never made them before! It seems simple enough, but I'm sure there are different ways to season them. So, how do you make homemade fries?

I've always just sliced them up to desired thickness, tossed them in olive oil, and then sprinkled them with either just salt or salt/garlic or salt/chili powder. yum!
(aaaaand now I want fries. thanks. lol)

I cut nice and thin then toss with EVOO, garlic salt and pepper. Bake at 400/425. But we usually do yam fries; we do regular potatoes as well when FIL is over.

i do wedges because they are easier but I like olive oil, garlic salt, chili powder, and a little cayenne or jalapeno powder for kick!

I like wedges with olive oil, salt, pepper, and Montreal steak seasoning. Yum!!!

@Bao: I just made some homemade french fries last night.
I looked up baked vs fried and went with the fried version instead because people said fried taste better than the baked version.

I love love Michael Chiarello's recipe. Parboil the potatoes, lightly coat with oil and salt and stick the rest in a 400 degree oven. Seriously, so good.
