Today is my husband's birthday ... My April Fools man!! LO and I are going to make some cupcakes, but I want to "ruin" one of them as a little joke. Can I just add a bunch of salt to it before baking? Will that work? -- Can you tell I don't bake?
Or, is there a better way to make it taste weird that won't hurt him or break a tooth? I thought about hiding something in it, but that's dangerous territory.

you can make it savory instead (like, in a bad way)
but yes, you can add a ton of salt. Also, disgusting. Even something like a couple TB of salt will ruin the batch

Add Hot sauce to the frosting (if it's chocolate/not noticeable)

I've seen meatloaf cupcakes with mashed potato icing but that might be too much work.

You could add garlic or onion powder to some of the batter or the frosting - that would probably work for a vanilla cake too. Or if you do a whipped cream frosting you could steep herbs or garlic in the cream, then strain it out before you whip it.

Welp! I forgot to add my flax eggs, so it's probably going to be terrible anyway!! 
I added a LOT of Sriracha to his. 
We shall see. My luck, he'll probably love it, and not get that it's a joke.

He liked it. "A little salty, and the garlic aftertaste is a little weird." -- That was his only feedback. Ha! He ate the whole thing.
