We cook salmon (or a similar fillet) at least once a week.
I usually pan sear (sometimes finish in oven), broil, poach, stew (but more whitefish than salmon) or bread for tacos.
How do you cook salmon or a similar meaty whitefish? Looking for new ideas.

It's (fresh) wild salmon season (almost over. boo!) so we've just been pan frying or grilling.
Sometimes i'll do a dijon-maple glaze or a hoisin marinade for the salmon.
Have you done a simple flour-egg dredge for the white fish? I normally do that and pan fry pieces, and do a soy dipping sauce.

@Freckles: I did a hoisin/oyster/sugar marinade last week and I was shocked at how well the fish absorbed it! It was so tasty!
And yeah, I usually do a egg wash then bread with panko/seasoned bread crumbs and pan sear the fillets OR in cube form for tacos.

Baking in a packet is nice (like with oranges etc), or our favorite glaze to bake with lately is a sirracha lime glaze from Gwenyth Paltrow (in Self magazine). Yum!

I have a honey/brown sugar/mustard glaze that I like, and I usually bake it in a foil packet.

We just did halibut in parchment packets this weekend, with orange, saffron, green onions, and carrots (we got a little fancy since it was our anniversary dinner). I'm totally sold on packet cooking!

We usually always grill. DH is in charge of the grill, so I am not sure exactly what he puts on them. We had salmon last night, think he just did salt, pepper, lemon, but it was delish!

Have you ever made parchment packets for the oven? SO easy. Lightly oil salmon, stick on parchment paper, top with flavorings (like, cut up some lemon and place a few rings on top of the salmon, along with a couple sprigs of fresh dill), wrap up securely, and bake.
Google "salmon" and "parchment" for about a million suggestions of really easy ways to change things up. YOu can stick other veggies in there with the salmon and those will steam too, so you can have practically a whole meal all cook together in your little parchment packet.

I typically grill it on the skin side. I cook it on low and don't have to flip it. I usually mix some garlic and lemon juice into butter and brush it on top. I've tried honey glazes and mustard glazes as well.

When I cook salmon I like to spread pesto on top, pour in a cup of white wine, and bake uncovered.

I grilled a salmon filet last night.
I put it on foil skin side down and put a couple dabs of mayo ontop to keep the moisture in ( I hate mayo and can't taste it once cooked), then I sprinkle brown sugar, smoked paprika, and whatever other spices sound good, then I top with sliced sweet onions.
When the weather is bad I do the same thing in the broiler. I've mixed up the mayo with yoshidas gourmet sauce too.

I mix maple syrup with soy sauce, ginger, and garlic. I put the salmon in a glass baking dish and cover with the "sauce". I bake at 400 F for 20-ish minutes covered in foil and about 5 minutes uncovered. Yum!

Grilled! Yum. I love Salmon either with pesto (just rub prior to grilling) or blackened seasoning (rub olive oil and then season).
Sometimes I'll pan fry white fish with Old Bay seasoning...it's and old standby when 'there's nothing in the fridge'.

I usually bake salmon in a foil packet, usually a lemon-pepper type.

We're big fans and I use any leftovers to make salmon patties/burgers for myself.
