I wait til the pan's hot, throw some butter in, drop in the steak. Depending on the thickness I'll cover and cook 3-5 mins each side.
I love pan fried steak!

Sear on the stove both sides for a minute or two, then transfer directly to oven for five to eight minutes depending on how done you like it. Then let meat rest for another minute to let the juices settle before eating.

Let it come up to room temperature before cooking and be sure whatever you're cooking it on is very hot before putting the meat on (don't put it on right when you turn on the heat, wait until it's hot). Only flip once, don't keep flipping back and forth.

I use a cast iron grill pan. I also swear by a meat thermometer. No more over cooked steak in our house. It comes out perfectly every time.

I usually grill it too. My BIL can pan fry them really well, but I can't!

We sear it on a cast iron on the stove for a few minutes then transfer to the oven for a few more minutes. It's delicious! Mmm... now I want steak.

When DH doesn't feel like grilling, we have this Le Creuset stovetop grill pan thingy and it pretty much tastes just like the grill...It's just a beeotch to clean!

We do it like @laughlines; let the meat come to room temp, and put it in a HOT pan. We rub the steak down with a little olive oil, add it to the hot cast iron skillet and pop under the broiler for a couple minutes each side. Crispy exterior, tender rare (or however you like it) center.

So I did the whole pan sear then oven technique and my fire alarms went off!! Ah. The steak was decent though!

We sear on a cast iron for a couple minutes and throw in the oven as others have described. Our alarms go off too someyimes when we make steaks or burgers.
