Depends what kind of kale it is. If it's tender baby kale; in all sorts of salads. If it's tougher, more "mature" kale then I sub it in for spinach in a lot of recipes. Tacos, soups, wilted with garlic, etc.

In smoothies and sauted with garlic.
I also like to make kale chips with it. You just bake it until it gets crispy.

Besides as kale chips, I love to cook it in some chicken broth mixed with garlic, chickpeas, and brats. The kale picks up so much flavor!

I treat it just like a regular savoy cabbage, steaming it and having it with a roast dinner, for example. I put some in my spring rolls last week.... but my favourite way to cook it is to saute it with garlic and olive oil - either as a side dish or as a lunch, sprinkled with finely grated parmesan and black pepper. Yum!

Sauteed with garlic and red pepper, in a soup, baked into 'chips' juiced. I like kale better than spinach, and my husband loves kale and spinach, so we eat a lot of kale in our house!

I like it steamed with onion, salt and pepper. I've also started doing a really delish dinner (basically putting all this stuff together in a bowl) of steamed kale, sauteed onion and ground beef, and roasted butternut all seasoned with curry and cayenne. Enjoy!

salad! the key is to massage it for a few minutes in dressing (I use olive oil and lemon juice) and then let it sit for a few more minutes to soften up a bit, otherwise it's too tough. I like to toss it then with couscous, white beans, cheese (parm, goat, or feta), and other veggies that I have around (raddichio, tomatoes, scallions, peppers, etc) for a really hearty, filling salad, or skip the couscous for just a green salad.

i make kale salad with dried cranberries, toasted walnuts (right out of the oven, the heat helps soften the kale) and honey mustard dressing. i also love portuguese kale soup, with linguica or chourice.

So far the only time I've had Kale was in Zoupa (soup with Kale, Sausage, Potatos and Cream)... Google olive-garden's copy-cat recipe, yummy!
