I'm not a big fan of mac N cheese. But mil made some over the weekend and LO seemed to like it.
Do you have a favorite recipe or way to make mac N cheese?
Do you ever add anything to it besides just pasta and cheese?

I use the recipe from The Joy of Cooking and it always comes out delicious. You start with a roux, add some milk and onions and simmer. Then add the cheese and noodles. SO GOOD. I usually cut it into squares and individually wrap and freeze them for easy weekday dinners or lunches.

I have a recipe that I always use, but I don't know it at the top of my head!
I use cavatappi noodles, sharp chedder & pepper jack cheese, milk, sour cream, and a few more things... then I top it with blue cheese and panko and bake for 40 minutes!

with boxed mac and cheese, I usually add peas or brocolli, or have a steamed artichoke with it
from scratch, there are like a zillion ways I love it! dh makes a bunch of yummy versions--one with leeks and mushrooms, or one with pimento cheese.
can you tell I love mac and cheese? haha

I don't have a recipe because I grew up making real mac and cheese (not from a box) so I pretty much have it down to a science.
When I want a basic and quick mac and cheese: elbow macaroni or some other short pasta, sharp cheddar cheese, butter, milk, salt, pepper, ground mustard. Cook the elbows first (not quite all the way cooked), dump some of the pasta in a big pot and add some pats of butter and milk, stir in sharp cheese and mix and keep doing that until all the pasta is coated. We might eat it just like that if we're in a pinch or I bake it with a mix of Italian breadcrumbs and more cheese.
When I want to be gourmet about it I make a roux with flour and milk and add sharp cheddar, gruyere, and some other cheese and then add the pasta.

Ahh. Shouldn't have clicked on this as I'm hungry and it all sounds good. I like basic recipes, but Cooking Light has one with butternut squash and bacon that is divine.

Open box... follow package instructions.
If I make it from scratch... I use a 1/4 c butter, 1 cup cream, bring to a boil and simmer for 10 minutes. Stir in 1 cup cheese of choice and whisk until cheese is well melted. Pour over noodles.

Two ways:
-make a roux, add cream cheese, Dijon, salt, pepper and sharp cheddar. I combine the sauce with penne, top with paprika, cheese and bread crumbs and bake.
-elbow macaroni, cream of cheddar soup, garlic, salt, pepper, cheese, bread crumbs and bake.
I've also added puréed sweet potatoes and squash to my cheese sauce which was yummy.

I make it pretty basic for the kiddos- elbow macaroni cooked al dente and then a roux- butter, flour, milk, s&p, nutmeg, then add in grated cheese, then pour in macaroni. I generally cook the pasta in one pot while making the sauce in another and they are ready at the same time to mix together.

Flour and butter roux, add milk and then add extra sharp cheddar cheese. Season with S&P and once the sauce is ready, toss over al dente elbow macaroni. I bake it for about 20 minutes, with buttered bread cut up into squares on top.
We don’t eat boxed mac and cheese.

When making a quick version for LO, I use cooked spiral pasta, cottage cheese, sharp cheddar and Parmesan. You can't go wrong on measurements. If you use a lot of cottage cheese, it will be more creamy. If I have Gouda, I will sub that for sharp cheddar. Microwave for a minute or so (until cheese melts). So good and easy and I like that it had cottage cheese instead of cream or butter. I basically adapted this way as a quick version for LO from this recipe. http://m.allrecipes.com/recipe/19368/chucks-favorite-mac-and-cheese. I make the full recipe if I am serving a group.

I have used a lot of different recipes and they are roughly the same. But what I like to do is steam cauliflower and puree it and mix it in the sauce.
