I can tell because I don't feel as full and LO seems to get irritated when nursing. Also, if I pump and I only get a little, then that's an obvious one.

You won't feel as full after engorgement is over. So that isn't necessarily the best sign. I think your babies cues are important. Are they still hungry after nursing (a full nursing cause there are times he is just distracted). Pumping can be helpful when I was regularly pumping.
The big one for me was that he wasn't gaining weight (like at all).

My supply dropped when I got pregnant but didn't know it yet. I went from pumping 10-12 ounces to barely 2 ounces in the morning. I tried taking all kinds of supplements, eating oatmeal and all that stuff for a week until I found out I was pregnant.

This is the best article I've read on it. Things like a fussy baby at the boob or more frequent nursing sessions do NOT mean that your supply is dropping--just that baby may be signaling your body to make even more milk. The best and only way to really know is if baby stops gaining weight or stops having enough wet/dirty diapers.

I'm dealing with a wee drop in supply at the moment and I can tell because LO does a lot of sucking without a lot of swallowing, it takes longer to get letdown and LO cries / frets at the breast.
I'm working on boosting my supply by drinking lactation tea, drinking more water, eating more calories and I've just baked a batch of lactation cookies!
