My husband looooves it, and swears I would too if I found the right place to get it from. But I've tried his and it's just meh!

How do you not love a bowl of noodles the size of a small bathtub? I don't know how to help you, but pho is amazing. Okay maybe you aren't adding enough of the fixings? Got to stir in everything, with some rooster sauce.

I just looked up a crock pot pho recipe because you got me craving it after seeing this post. There are some pho places that flavor the broth with a lot of msg which I don't like. When made right -it is so good! We tried making it once and the broth took us like 12 hours to make on the stove top.

I'm meh on pho because I'm vegetarian and the veggie version is super boring. Dh loooooves it though but says it matters where it's from-- he hasn't had any pho in NYC that's decent!

Go to Vietnam and you'll be convinced. But i agree, i have yet to have anything that great here after having the *real* thing.

Sooo delicious. A Vietnamese co-worker of mine brought me to nha trang in chinatown and that's where i still go.

@mrbee: it's definitely about finding the right place. There are SO many Pho places in NYC and many of them are subpar!! My favorite in NYC, that I've tried, is on Grand St in Chinatown! And even then sometimes the broth can differ day to day!

@BoogieBea: look up Steamy Kitchen's recipe. It's amaze ball. A few times a year DH & I make it and have tons of broth to freeze.

I respectfully disagree that it's just a bowl of soup. There's a ton that goes into the stock and it simmers for hours. Like any proper broth does!

mmm now I want Pho too!

I had it exactly once as a kid. My parents' friend took us to this place she swore by, and I burst into tears as soon as I tried my first bite. So apparently I don't get it either!

You've never tried my husband's pho. Ah-mazing.

Im meh on it too. Its just plain noodles in broth with meat or veggies. Id much rather have some delicious pasta if I'm going to eat a huge pile of noodles.

I don't eat it but hubby will get it for breakfast if he is out on a job near one particular restaurant. He says its all about the broth, and ordering the meat on the side to let it cook in the broth while you're eating it. Seems like there are a lot of pho joints opening up around the place here.

For years, I was a "pho hater" - I just didn't get it!! Then somehow, a light switched and I became obsessed... I pretty much wanted it every day. It was the one thing I craved when I was pregnant with #2... but recently, the thought of pho makes me nauseous. I guess I got sick of it after two whole years of constantly wanting it. DH doesn't like pho either, so he's lucky he doesn't have to get dragged to pho restaurants anymore!

I just love that it feels so warm and soothing and light. All the different veggies add a brightness to the soup too - the mint leaves, beansprouts, lime, jalapeño slices, and vinegared onions - yum! My friends claim it's a great cure for hangovers too - so there's that!

I think it's good, but I've never been blown away by it either.
Spring rolls and cha gio on the other hand..

I personally LOVE rice noodles. I love it more than potatoes, rice and any other carb. I also LOVE broth. Not so much a fan of stew. So pho is perfect for me.

I love that it's customizable to your liking. You can ask for different cuts of meat. Additionally, you can put in your own sauces and seasonings. A popular one for people who don't like "clear broth" is to add "hoison aka seafood sauce" into their broth.

I prefer clear brother and two whole chili peppers.

Additionally there are places that make good pho vs just your regular pho places. Depends on how much of a purist you are.

I agree you probably haven't found THE place yet. It makes a HUGE difference between good pho and meh pho.

Now I crave pho so bad!

I love Pho, but agree with others that it's all about the fixings. The basil and jalapeno really make it for me. Oh, and a big squirt of chicken of doom/Sriracha sauce!
