What are you eating now?
We had/have a lot of other restrictions, so things were VERY limited, but roasting veggies became my staple. For some reason roasting things really makes them taste amazing :). If you are doing quinoa try tossing some raisins into the pot. It really gives the quinoa a great flavor :). Oh and lots of onions.
Sorry, I'm actually little help because I literally ate the same thing from when DS was 8-21 months and just added each new food we determined to be safe to the pot. When it was just the top 8 allergens (plus some extras) we were avoiding, when DS was 2-8 months, I pretty much just ate like normal but excluded those foods from the recipe/meal.

I lived off of fried egg sandwiches on a dairy-free bagel. I had that and a smoothie made witg coconut milk nearly everyday for lunch for the 8 weeks I was dairy/soy free.

We do taco night with fresh guacamole once a week and I just don't put cheese on mine. Just be sure to either make your own taco seasoning or read the label closely because a lot of them have dairy and/or soy in them.

Right now a typical day looks like this:
Breakfast: Oatmeal + Fruit
Snack: Odwalla smoothie + Lara bar
Lunch: Chix broc ziti/salsa chicken + rice/turkey chili+rice
Snack: Rice cake with hazelnut chocolate butter
Dinner: during the week Chix broc ziti/salsa chicken + rice/turkey chili+rice/pancakes
Dinner on the weekend is easier because DH is home and I love to cook for us. During the week I try to get by on as little cooking as possible b/c it is just LO and I so I will cook 2 nights and then it is left overs for lunch and dinner.

@MamaMoose: spices are the worst! There is soy in basically everything premade from what I've found.

@littlebittyhouse: It's absurd. As @MrsJacks told me you basically have to resign yourself to only shopping the outer edges of the grocery store!

@littlebittyhouse: I never really had quinoa prior to LO. From the time he was 6 months old on that was the only grain (technically a seed) I could eat. I've learned to love/hate it. The thought of eating it right now makes me want to be sick, but I was eating about 2 cups before cooking a day and am just on quinoa overload!
If you decide to try it there are a lot of possibilities out there...from savory to sweet. You can even try to make a pizza crust with it (it's on the crunchy side), cakes, pilafs, casseroles, toss it into stews, smoothies etc for a protein kick. It really is a very versatile food. I have a "dorito" recipe somewhere too. I wasn't able to use the seasoning it called for but the chips themselves were nice.
Have you looked into coconut aminos? We had to avoid coconut, but I know a lot of mom's that loved this stuff to liven up their foods. Said it tastes just like soy sauce! Might help add some flavor. You can always try to make a vegan "cheese" with nutritional yeast (I have a recipe for a spreadable and slice-able version...never got to make it since we found out LO is allergic after I made the sauce version). If you like it you could use it for most anything that calls for cheese, like mac n cheese etc.
What @MamaMoose & @Mrs. Jacks pointed out is very true. Stay in the outer parameter of the grocery store (for us that was really only the fruit and veggie section haha). Read labels and read every time you shop, even if it's a product you purchased before (they are always changing them) and if you buy pre-made stay with minimal ingredients as possible.

I try not to even buy premade because the few times I have it just doesn't end well. I feel like I have a really good handle on it now, I am just getting so BORED with the same 5 dinners you know.

I love hummus "quesadillas" Put hummus between 2 tortillas and toast it up in the pan. Yummy.
I also ate a lot of tuna fish.
