We're throwing a bridal shower brunch for my soon to be SIL and I'm making most of the food. She asked for brunch finger foods so instead of a breakfast casserole, I was going to make mini egg muffins/crustless quiches. What would you suggest for fillings? I'm thinking of making 2 or 3 dozen so I wanted to make a few different kinds. Right now, I'm thinking of doing spinach, mushrooms, and feta as well as a ham and cheese. Any other suggestions? TIA!
