Just made a cucumber/tomato salad since that's what we got in our CSA box! Just those veggies, some red onion, red wine vinegar and a little olive oil and pepper. Toss with with some feta if you're so inclined! Super easy and tasty
Better if you let it marinate a little while.

@Canoli: maybe not summer-y but have you tried roasting veggies? One of our faves lately is cauliflower roasted in the oven with olive oil and TJ's garlic salt from the grinder sprinkled on top.

@jhd: I usually roast carrots, squash and sweet potatoes and I'll steam broccoli but even my little guy is getting sick of carrots.

I love roasted cauliflower or roasted Brussels sprouts (I know it's gross when I was a kid but my mom boiled it but roasting it makes all the difference).

Right now we are going a lot of corn and asparagus on the grill. I also like a quick greek salad in the summer- just chopped tomatoes & cucumbers, a little sliced onion, some feta and olives, olive oil and vinegar dressing. I am also really into chop/cobb salads right now!
In colder months I also love roasting veggies- favs are broccoli, cauliflower and butternut squash.

We do a lot of roasted cauliflower / broccoli, sauté green beans, peas, Edemame, "roasted" carrots.
When we have time to get to the Asian mart then Chinese broccoli, baby bok Choy are house favorites.

I also like to roast cauliflower in garlic olive oil and salt.
Sweet potato or butternut (or acorn) squash "fries" are popular in my house. Tomato and bocconccini with balsamic is a good go-to (although I'll just eat a plain tomato with salt happily).

My mom just did some cut up zucchini and yellow squash saute in olive oil and top with pine nuts. It was pretty good!

@Canoli: Looooveeeee summer grilling! We make all of our veggies on the BBQ. We've been eating; corn on the cob, asparagus, fresh beans, broccoli, and our fave which is a medley of mixed peppers and onions (I'll add broccoli to it as well sometimes) add a tblspn of oil, garlic, italian seasonings, black pepper.. mix it all together and grill- Yum!
Also, if you don't have a veggie pan for your BBQ, get one! It makes it sooo easy.

Carmelized green beans - toss fresh green beans with a little olive oil and saute on med-low until they start to blister. Toss with a little salt and sprinkle with toasted pine nuts (we leave out the pine nuts now because LO is allergic to nuts, but they are still yummy. )
Roast carrots that have been tossed in olive oil and balsamic vinegar.

I really love simple side salads (lettuce, carrot, tomato, celery, green onion) and lightly blanched green beans with tomato & white beans tossed with a vinaigrette dressing.
