For those of you have have tried baking cakes and using banana or applesauce in place of sugar, do you find that the cake comes out of the pan cleanly? I really want my cake to retain its cupcake shape

@Mrsbells: are you using a cupcake form??
Just make sure to spray all sides and tap out with flour and put some parchment/wax paper on the bottom.

Usually if something doesn't come out clean it's due to a lack of fat. If the recipe you're using doesn't use butter/oil etc. then I would recommend lining the bottom of the pan with parchment and greasing the whole pan (I am partial to coconut oil for greasing).
Also, in case you're still soliticing ideas for sweetening the cake, I really like using dates. My dad is vegan and sugar-free and we frequently use dates soaked in hot water and pureed in order to sweeten baked goods for him.

@regberadaisy: yes I am using this oversize cupcake pan. You should really check out the customer photos on Amazon some of them posted their professional photos and they are so cute
@hergreenapples: yeah I think I heard someone mention that. I wasnt aware of soaking and pureeing them. I will look for dates I think I may have seen some at my local supermarket

When I make cakes and replace an ingredient with applesauce, it's usually eggs, not sugar. As long as I grease the pan, I've not had a problem. Good luck!

@hergreenapples: by the way I am using fat/margarine in the cake some hopefully you are right and using fat helps it to come out smoothly!
