Ooh, I'm talking about this in a soon to be blog post, but we've been doing a lot of overnight steel cut oats (cheap). After they are cooked (using only water of course since it will sit overnight), stir in some half and half. That will punch it up a bit (and hopefully you added a little salt to the water).
Our favorite mix-in right now is Kodiak Mountain Berry syrup (thanks Costco). Otherwise we are pretty generic with brown sugar or fresh berries.

I cook my steel cut oats on the stove for like an hour / hour and a half then dish them into containers for the week and keep them in the fridge. Sometimes I caramalize apples and mix them in. My favorite it to just top them with pomegranate seeds, brown sugar and walnuts with a little milk!

Steel cut oats in Mason jars! You cook the oats for just 3 minutes then transfer to Mason jars. Leave enough room for milk to loosen in the morning and any add ons. I usually make it right after dinner then put it in the fridge before going to bed. I like adding milk to loosen, frozen fruits, peanut butter for extra protein. My DD loooves steel cut oats! I only bake with rolled oats!

I add peanut or almond butter and fruit preserves! It sounded gross to me at first but it is so delicious! LO eats this almost every morning, and I eat it at least once a week (when I don't feel like making eggs!). I use plain instant oats though.

@Mrs. Lion: give steel cut oats a try! It has a nice nutty crunchy texture much like Quinoa. It's definitely more expensive than rolled oats though. We eat steel cut oats pretty exclusively because DH can't stand the mushy texture of rolled oats. I buy them off Amazon subscribe and save.

We do steel cut oats overnight in our rice cooker with the timer set. Then in the morning we stir in natural PB, that's really all it needs in our opinion. Delicious.

I just use regular rolled oats since I'm too lazy to dirty another pan, and I usually top with a little bit of maple syrup and some walnuts. The banana adds a lot of sweetness, and I really like the texture the chia seeds add.

@Mrs. Lion: Yes, they have quite a bit of protein, plus a ton of nutrients, and they are super filling. I am not a fan of them in drinks but in oatmeal they are really good!

I can't find my favorite recipe but will keep looking: it's oats, milk, vanilla, chia seeds, and chopped strawberries. It's sort of a strawberries and cream flavor.

I just did them overnight in the slow cooker for a new years day brunch. I used mostly milk and a little water, 1 c. of oats to 3.5 c. of liquid, plus a little brown sugar, cinnamon, and chopped apple. It was a big hit.

So, those of you cooking them for a long period of time, what texture do they become? I am using Bob's Red Mill right now and the package says to cook for 10-20 minutes. I am usually right in the middle somewhere. If you cook them overnight in the slow cooker do they become mushy?

@bpcmarj: I also used the Bob's Red Mill steel cut oats for overnight in the slow cooker. They were quite soft, but there was still a little texture. You could tell that it was oatmeal and not some kind of porridge or soup.

Forgive my ignorance... but what makes steel cut better? Is it just a texture difference? It seems like so much more mental effort than the 1 minute in the microwave when I'm ready to eat it!

@Mrs. Lion: a lot of people think steel cut oats are healthier, since they are the least processed, but there's not really much difference between them and old-fashioned rolled oats. Instant oatmeal is the most processed, but it's okay if you're using plain, unsweetened ones -- the packets of sweetened oatmeal contain all sorts of additives and sugars. The nutritional differences between the different types are pretty small, it's mainly a time and texture thing. I like the chewy bite of steel-cut best, but I also like rolled. Instant is too gluey and mushy for me.

My sister was just raving about a steel cut oats crockpot recipe that she used. I think this is the one http://community.epicurious.com/post/slow-cooker-steel-cut-oats-apple-pie-oatmeal without the caramel. It sounds good soaking the oats in Apple cider. I've always thought along the lines as @Mrs. Lion: and enjoyed rolled oats more and they're about half the cost at the bulk food store where we go. But the overnight soaks of steel cut sound good, I think Im going to have to give them another try.
