Have any of successfully tried any overnight oatmeal recipes in a crockpot? We will be having an overnight guest staying in the middle of the week and I thought crockpot oatmeal might be a great time saver since our mornings are hectic. I've seen online that sometimes the sides can burn or over cook. I'm wondering if anyone has had any luck? My crockpot doesnt have a timer so it wont automatically switch off or switch to heat.

I have not done overnight steel cut in my crock, but I have made large batches on the cook top and reheated throughout the week.
You could also do overnight oats in the fridge and warm them at work? Just a thought.

I don't have any crock pot advice, but like @mrsd: mentioned, I make it ahead every week (I've also made it for guests) and heat it up every morning and it tastes great. This is the recipe I make -

A good friend of mine loves steel cut oats in her slow cooker. She makes a big batch overnight and reheats throughout the week for her family. She’s particular on the exact brand though- natures promise organic from stop and shop only. I tried it once and they didn’t come out good at all.

@Mrsbells: oh nothing major, it was just too thick and gelatinous and blah. Plus i think maybe I just don’t like them that much. I think not enough liquid? I didn’t like them enough to try again.

@Foodnerd81: yes a lot of the photos I have seen the crockpot oatmeal looks very very thick, so I plan to change the ratio of liquid to oats.

But I would be worried about it not turning to "warm" and having them get burned or overcooked. This recipe says 7 hours on low but that some people's burned in that amount of time. You could always wake up really early to turn off the slow cooker and go back to sleep

Overnight in the crockpot sounds cool, but I would be nervous about how it would turn out while cooking unsupervised.
We make steel cut oats ALL the time, and I love making them the night before and then just reheating them in the AM. It takes a while to cook, but it’s mostly unsupervised so I just have it on while unwinding at the end of the day. And reheated steel cut oats are still 100% just as good as when they’re made fresh! And you can always adjust the thickness by adding more milk or water while reheating.
And I’ve found most brands are pretty good! Bob’s Red Mill, Trader Joe’s, Wegmans - all have been equally delicious!

To get around burning/sticking, I use the double boiler method. I put water in the crock pot, then cook the oatmeal in a mixing bowl that's been sprayed with non-stick cooking spray. Make sure there's an inch or two of space at the top of the bowl (don't put in so much water that it rises to the top of the bowl or it will splash into the oatmeal when it boils)
I've only made it during the day because I've just made batches for me (that I freeze and take to work). I didn't want to have to deal with putting it away in the morning.
And I'm pretty sure I've always cooked it longer than 8 hours for it to be "done"
but that recipe smells and tastes SO good!

Just as an update, I made this using a generic recipe with steel cut oats, water, almond milk, cinnamon, nutmeg, vanilla. Once I put extra amounts of water and milk to avoid it burning. In the morning it was a bit runny so I thickened it with an instant version of steel cut oats that has other grains like flax, barley etc. It turned out really great.
