So far I haven't done any meal planning.
I'm going 85/15 Paleo so it's not 100% strict, but for the most part on days I'm at home, I'll have eggs and coffee or OJ for bfast, leftovers or a salad for lunch and dinner is usually a protein + veggie sides + lettuce wraps. DH usually eats everything + rice.
On my at work days, I'll have fruit + coffee, or just coffee (I'm so busy I rarely have time to eat bfast), soup+salad for lunch, and same for dinner.

beef or turkey kabobs....I just roll them into kabob-like shapes and bake them...they are really good in a home-made tomato sauce and aside salad.
I get chopped spinach and put it into an egg omelet.
I'll have shredded chicken (bake breasts then shred) in a veggie soup with some cayenne powder to give it some spicy taste..
maybe some date, dried fruit or smoothies.
I might do a ground turkey chili sans the beans but instead use mushrooms, sliced squash and ground turkey all in a chili soup.
