I am in charge of desserts for thanksgiving this year. As in, if I don't make them, there won't be any!

My DH requested both a pumpkin and a pecan pie and I have purchased all the ingredients. I cheat and use the pillsbury pre-made pie crusts.
My question is, how much can I do in advance? Having LO in the picture has made cooking really challenging!

Can I make pies a day early? Can I pre-bake the crusts a day before? Make the fillings and stick them in the fridge?
What are my options?
I have to make other food as well so I'm trying to map it all out!
