Mulligatawny soup: I don't have an exact recipe (I just throw everything in), but the Pioneer Woman's version looks pretty similar to what I do.

I make vegetable beef soup.
2.5 pounds of chuck roast, cut into bite size cubes or just stew meat.
1 can each of peas, corn, and green beans
2 russet potatoes peeled and cubed
1 onion cubed
1 cup each carrots and celery
2 bay leaves
1 box of beef broth or a few bouillion cubes
1 teaspoon of dried thyme or Italian seasoning
Salt and pepper to taste
Enough water to cover everything in the pot
Simmer for 90 minutes or until meat is tender! Adjust seasoning when everything is cooked through.

I've made this Broccoli Cheddar soup 3 times in the last few weeks. It's definitely fattening, but it's delicious and the kids eat it. http://smittenkitchen.com/blog/2015/09/broccoli-cheddar-soup/
