I like to just eat it with salt and pepper. Or my lazy version of guac is mashed avocado with salsa mixed in.

I like it just spread on toast, like @betsyboop: . Drizzle with olive oil and a sprinkle of salt- so delicious.
I also LOVE guacamole but that's more work.

Guacamole - mash with a fork, add squeeze of lime, s&p, red onion if you have it, hot sauce if you like

The very easiest version of guac is mashed avacado with salt and lime juice. DH likes to scoop out his avacados and eat them with cocktail sauce.

-cut in half, sprinkle with sea salt and balsamic and eat with a spoon!
- make salmon salad with lemon juice, salt, pepper, seasoning, coconut oil and put it on the inside of an avocado
-mix with tomato, lime, cilantro, salt and onion for guacamole
-make open faced egg and avocado sandwich with soy sauce and toasted sesame oil

@bebefly: yes they should give a little when squeezed. If they aren't ripe yet storing them in a brown paper bag will speed up the process.

Sprinkle cheese on a tortilla, heat it and spread avocado...mmmm. Put in a sandwich. My fave is scrambled eggs and avocado in a hot tortilla, burrito style. Or just plain.
