Cookie and Kate is a great website/cookbook. Budget Bytes has a lot of vegetarian recipes. Jamie Oliver has a cookbook called Veg, but I don’t have any experience with how good it is.

@gotkimchi: Yotam Ottolenghi writes great veg forward cookbooks. His book Simple has lots of really good quick, easy recipes. Plenty and Plenty More are also fantastic, but generally not weeknight recipes.
We eat so many veg tacos. Sautéed poblano pepper & mushroom w/greens and melty cheddar are a favorite (originally a recipe from Rick Bayless’s Mexican Everday, but now more our own) and black/pinto bean tacos with greens, good salsa and fresh tomato and onion are the easiest weeknight meal.
If your kids will eat Indian food we also love Madhur Jaffrey’s Vegetarian India. The ingredient lists can be long, but the recipes come together surprisingly quickly and are universally delicious.

Any of the Ottolenghi/Tamimi books. Their recipes have never let me down. Some recipes are more involved, but it's always about bringing out unexpected characteristics of the veggies.

Yum and Yummer is my go to cook book especially for weeknights .. they’re easy to follow, relatively healthy and gets us eating more vegetables.

I like to use zoodles for extra veggies. A favorite in my house is zoodles with alfredo sauce. We usually add mushrooms and chicken to it.

@azbaby: this is a good tip. I also always cut any ground beef we use with cauliflower rice or mushrooms. No one notices and we get extra veggie and the meat goes farther

If you're able to swing ~$10/month, I subscribe to a recipe service called CookSmarts that has completely transformed how I cook. My husband is a lifelong vegetarian and I was really struggling with finding diversity in vegetarian recipes, especially because he's a fairly picky eater. CookSmarts sends me 4 recipes every week with vegetarian modifications, step by step instructions, etc. Thanks to them, I learned to cook tofu effectively, spice combos that make vegetables pop, flavor combinations, all kinds of tricks. It's been the best investment I've ever made!

I just got the Food Babe Kitchen book- it was very inexpensive on kindle. Haven't made anything yet but the recipes look good!
