We try to eat a fairly low GI diet, so assuming you're also staying away from artificial sweeteners for the kids, it's mostly about more veggies. I like to do cheese and "crackers" with cucumber slices, swap out lower carb fruits (raspberries/blackberries, and even strawberries are fairly low sugar). We use plain yogurt and mix in our own pureed fruit to reduce added sugar.
I really like flat-out wraps for things. There's a multigrain and flax one that only has 9 net carbs (total carbs minus fibre) which is pretty good for a bread product. If you pop it in the oven for a bit to crisp it up you can use it for a make your own pizza, and I swap them out for almost anything I'd want to use bread for.

Sausages, meatballs, cheese, low or no sugar yogurt, smoothies made with some fruit but also veggies like spinach and kale. Peanut or other nut butter on Apple or banana slices instead of bread. Also my son loves those seaweed snacks too.

Try cauliflower rice! Or some Paleo type recipes-I'll make E stuff with coconut flour sometimes and she likes it! Pancakes, etc.

I eat a pretty low carb diet because it's good for my tummy and my PCOS. Nomnompaleo has tons of kid friendly recipes because she has two kids. She even did this whole feature on everything she packed for them for lunch for like a month. Her egg muffins come to mind because they are easy and portable. I also like paleo pancakes which are basically bananas eggs and coconut flour.

@tequiero21: not sure if your kids would eat but I am addicted to zoodles (spiralized zucchini)
My 2 favs are :
Hot: Zoodles, vodka sauce, chicken
Cold: Zoodles, greek dressing, feta, chicken
yum!
When I spiralize a sweet potato and bake in oven with EVOO and cinnamon my kids scarf it down!!!

@tequiero21: @blackbird: Good call on the cauli rice! We love cauliflower mashed faux-tatoes at our house too. So easy:
1 head cauliflower (about 4 cups)
4 tablespoons butter
Salt & pepper to taste
Chop cauliflower roughly and steam until fork-tender. Place in a food processor. Add butter, salt and pepper. Puree until smooth
