I need to bring a Mexican main dish to a potluck next week. I usually just make ground turkey tacos with the flavor packet or salsa chicken in the crockpot when we do Mexican night here. I think I need more of a one dish item for the potluck though. Anyone have any favorite recipes? Maybe enchiladas? The easier the better bc we will also have houseguests the day I need to prepare it!

Enchilidas if you want easy peasy I usually do chicken breast in crock pot with cream cheese & salsa. Let it go for 6 hours, then wrap the mix in tortilla, top with enchilada sauce, cheese and bake for 10 minute or so. Top with sour cream and a side of rice (we usually skip rice we aren't Spanish rice fans)

You could do a mexican lasagna....or a GREAT side would be mexican sweet corn cake http://flavorthemoments.com/mexican-sweet-corn-cake/ (one of my personal favorites) or even just mexican rice (reheats easily with a little H2O)
What about a pasta side, like mexican style pasta? You could do ground beef+taco seasoning, noodles, diced tomatoes+onions (all canned or frozen) and melt a block of velveeta in.

Shredded rotisserie chicken plus tortillas plus canned enchilada sauce! Add sour cream and shredded cheese on top if you're feeling fancy.

A mexican lasagna is a great idea too like @blackbird: suggested. I later tortillas, seasoned beef, cheese, and beans. Then make sure the top layer is cheese. So easy and yummy.

I didn't do the paleo part (used real tortillas). I think it would be great for a pot luck b/c a flank steak sliced thinly can feed a lot, and people can have a choice about what to put on it. I did black refried beans, sour cream, guacamole, and the vegetables.

I also just recently threw together a Mexican-style rice and chicken casserole (no recipe, just off the cuff): 2 cups cooked rice, 2 seasoned chicken breasts chopped up and cooked (you could also use shredded rotisserie chicken), 1 can black beans, 1 can diced tomatoes, 1 can green salsa, 8 oz sour cream, 8 oz shredded Jack/Mexican cheeses. Bake 20 minutes at 350 degrees.
