Allright people... I've finally reached a point (comes about once a month) where I can't stand takeout anymore. But we get home from work and picking up RJ around 5:30pm every night and since RJ's bedtime routine starts around 6:30 or 7, there is just ZERO time to cook. The slow cooker has been great for an instant dinner as soon as we get home, but lately the planning, shopping, and prepping required ahead of time has even been too much for me.

Any SUPER EASY slow cooker recipes to share? I'm talking chicken, cover with salsa, cook for 8 hours. (Does that work? I remember someone mentioning something like that before.)

One of my favorites is pulled pork. Literally put pork shoulder in slow cooker, pour in root beer, cook for 8 hours. You can even do it with the pork shoulder frozen solid. The only thing is that you also need the BBQ sauce to mix with the pulled pork, and hamburger buns, and side dishes. So that requires some post-cooking prep.

Oh, I don't mind extra ingredients in terms of veggies... peeling and chopping veggies doesn't bother me if they add to the nutrition of the dish (although all the nutrition is probably cooked out of the veggies in the slow cooking process!!!).
