Some of the packaged cookie mixes make tasty dough - but the ones I've tried aren't very good for rolling/cutting - they are softer, for drop cookies.

I have a pretty easy sugar cookie recipe that makes a lot, freezes really well, and is pretty tasty (if you want to go the homemade route).

1 1/2 cups butter
2 cups white sugar
4 eggs
vanilla extract (or other flavouring)
5 cups all-purpose flour
2 tsp baking powder
1 tsp salt

Beat butter and sugar until light and fluffy. Add in vanilla, beat until combined. Beat in eggs one at a time. Sift together flour, baking powder, and salt, and add this slowly to the wet ingredients. Roll dough into a few balls, refrigerate for about half hour. Roll, cut and bake on a cookie sheet for about 10 minutes, depending on the size of your cookie.

All purpose gf flour should most likely be okay. It would be better to use a mix of a few flours (which AP usually is) as opposed to all almond flour, or all coconut flour for example. They should hold up just fine.

And the dough will keep in the fridge for ages. Like, at least a week, if you wrap it in plastic wrap first, then tinfoil.
