Unless its a sweet variety, do the same you would with any regular potato. The color is really just for show.

Same as any other potato. We mix with red and white and make potato salad or roast for 4th of July

I have. Pretty much the same.
When I was little my mom used to boil a beet with our potatoes to make them bright pink. We LOVED it.
