@caterw: thanks, sounds delicious! We usually use fennel to make this Italian veggie and faro salad that's faro with roasted veggies (fennel, eggplant, onions, peppers - all diced after roasting), lots of fresh herbs (I do a mix of basil, parsley and mint) and liberal amounts of balsamic vinegar and olive oil. So good.

@yoursilverlining: Yum! That sounds a lot like the salad I made for my lunches this week, but I used bulgur wheat and lentils instead of farro so it's sort of like a bulked up tabbouleh.

Ahhh! I need some jiajiang mein!!!! Now I must find myself a good jiajiang mein recipe!!!!!! Such a great idea!!
I am still trying to go low carb / low cal for myself while I want the remaining of my family to live "normal". I love the fact that DS (now 4) eats what we eat nowadays. So this is us this week:
Mon: Baked hamburger patties + baked sweet potato fries. I ate it with lettuce wrap while DS and DH ate them with buns.
Tues: Roasted cod and potatoes (1 pot meal), + salad
Wed: baked chicken for DS and steak for us. I am planning to roast or steam a big pot of broccoli. And salad. Some rice too for DS & DH.
Thurs: baked chicken for DS, for DH and I we'll probably eat frozen dumplings. Will make a side veggie and carb for DS.
Fri: Contemplating on eating out, haha. I have so much veggies at home but running out of protein! Or maybe I'll run to the store and get some pita bread, and make pita pizzas. I am craving pizza.
Motherhood is such a weird thing. I hate and avoid cooking as much as I could when I didn't have children. Nowadays all I think about is cooking!

I don't usually plan specific days, I just do what works with our schedule and what we have left. I try to have two options for leftovers, so I'll often cook two days and then take a day or two off.

Since you guys are posting that coconut curry, I wanted to post another recipe. Its a peanutty red version. Its SOOOOOOO GOOD!!! I use all coconut milk instead of the water/coconut milk mix called for in the recipe for extra richness and added a can of bamboo shoots and some sliced bell peppers towards the end for that Thai restaurant experience. A fistful of basil at the end wouldn't hurt either! I do it 4 hours on high.

@Pumpkin Pie: So this is a "quick" version of one of those old school guilty pleasure casseroles. I make it "healthier" by making my own "cream of soup" base, but you can totally just use the canned stuff. Also, I don't know why but this HAS to have the canned mixed vegetables - the mushy veggies just make it. Also a bonus is that my toddler gobbles it up!
2 cups cooked rice
1.5 cups chopped cooked chicken (I use Costco rotisserie chicken meat)
1 can (10 3/4 ounce) Cream of Chicken Soup
1 can (10 3/4 ounce) Cream of Celery or Mushroom Soup
1 can of mixed vegetables
**Broccoli cheese variation - replace mixed veggies with 2 cups of chopped frozen broccoli and add 1 cup of shredded cheddar.
Directions: Preheat oven to 350. Mix everything together and pour into a 9x13 pan that is well-greased or sprayed with Pam. Cover dish tightly with foil and bake for 30 minutes.
Homemade Cream of Soup Base: (makes 2 can's worth)
4 tablespoons butter
6 tablespoons flour
1.5 cups chicken broth
1 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon of poultry seasoning or thyme or dried herbs
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Directions: Melt butter in pan, add flour and whisk until combined and the roux turns blonde/golden. Add the liquids and seasonings and whisk together and cook on low heat for about 5 minutes until thickened.

We've got a short week as Thursday both DH and I have to attend separate charity functions for our work over the dinner hour, and Friday LO and DH are traveling.
Saturday: bacon cheeseburgers topped with avocado, tomato, onion and jalapeno. Grilled sweet potato wedges on the side tossed in olive oil, dried cilantro, red pepper flakes, S&P (these were SUPER good!)
Sunday: fish tacos with spicy cabbage slaw and avocado. Maybe some pinto beans on the side
Monday: Whole roast chicken and salad with goat cheese and apples on the side
Tuesday: Burrito bowls: lettuce, black beans, roasted corn, bit of cheese, avocado, onion, black olives, tomato and topped with black beans and steak
Wed: out with MIL
Thurs and Friday: work functions and on our own

Honestly I think somewhere along M-T there will be enough leftovers for Friday, so I put the skirt steak and chicken breasts in the freezer just in case we can't get to them And may I brag again, I love the fact that DS (now 4) is eating the same thing with us nowadays! Last week there were two days I cooked chicken for him while we ate steak, and he was really upset as I was eating a different thing. So I'll make sure he will eat the exact same thing as we do from now on. Heaven!

Full disclosure my two year old hates it but I have no idea why! It's great comfort food when it is cold out. It takes 45 for me to cook, not the 30 min listed.
