My LO loves mini spinach quiche
Banana oat pancakes (I like to add plain Greek yogurt) to the batter
I make steel cut oats for breakfast a lot
For lunch I tend to make stir fry noodles or soup a lot. I like to use buckwheat noodles or extra nutrition instead of empty carbs.

Here's mine: 16 mo DD LOVES this baked oatmeal recipe. Bonus - it's super easy and takes very few dishes to make.
Butter the bottom of a 9x9 baking pan, and - in the pan - mix together:
2 c. old-fashioned rolled oats
1 t. baking powder
2 t. cinnamon
1/2 t. nutmeg
3/4 c. almond meal
1/4 c. ground flax seed
You can also add fruit (blueberries are really good) or raisins if you want.
In a 4-cup measuring cup (you can use a small bowl instead), melt 2 T. of butter, then whisk together:
2 cups milk or non-dairy milk
2 eggs
1 t. vanilla
Slowly pour milk mixture over oatmeal mixture, using a fork or your whisk to move oatmeal around to make sure the liquid is settled throughout the pan.
Bake at 375 for 30-35 minutes. Cool and then cut into 1" squares for toddler nibbling. Store in the refrigerator or freeze. Reheat cut squares for 15 seconds in the microwave.

@locavore_mama: These are GREAT ideas. I need to get better at making batches of stuff like pancakes on the weekend and freezing them. DD eats way too many Kashi frozen waffles.
Making quiches is a great idea! DD loves omelets (even leftover) and will eat anything mixed with eggs!

@septca: I'm digging the baked oatmeal! That might be what I start making for DS's breakfast and I think I have everything at home right now.
I make a double batch of these carrot pancakes from Weelicious (http://weelicious.com/2010/04/01/carrot-pancakes/) and freeze.
DS is currently so hit or miss on protein so I"m not too helpful in that area. Currently he's a big fan of hummus and peanut butter so we try to give him some of those in some form. He is also apparently one of the few kids who isn't into dipping things so many times he'll just eat those with a spoon.
I also make quinoa bites made in a mini muffin pan and freeze those. Meatballs are also good and toddler friendly.

@septca: what's the consistency of the bars after they are baked? Like a muffin? More firm?

@MUI831: YUM! Yeah, DD is not so big on protein either. That's why I hide the almond meal and an extra egg in the baked oatmeal.
@looch: Firmer than a muffin. Maybe like a brownie? If you wanted it to be softer, you could do 1/2 cup of almond meal and another egg.

I LOVE weelicious.com. LO has loved every thing I"ve made from there, some faves are the spinach muffins, ham and cheese muffins, and green mac & cheese.

Total hit in our house. LO devours them each and every time. Even my husband the oatmeal hater loves it. I add plain greek yogurt for extra protein.
I've made these power muffins before and they're pretty good. Very dense but def super nutritious.
