@AnnabelleG: Not any sites or cookbooks but I joined a Vegan/Vegetarian group on Facebook a while back. There's loads of recipe ideas and advice.

I started my plant-based diet by getting recipes at https://www.vegetariantimes.com/
And like others said above, smitten kitchen and minimalist baker are good sites. I often just google what I'm looking for, and great blogs pop up!
My biggest tip is don't try to change everything at once. My easiest way to introduce vegetarian food was through soups/stews cuz hubby didn't really miss the meat. We don't really use meat substitues or tofu, but we do eat the Morningstar farm breakfast sausages and keep the buffalo chik'n patties in the freezer for quick dinners or salad toppings.
I think I have an old thread about vegetarian meals for toddlers someplace, let me see if I can find it. It gave me a bunch of great sites and ideas for kids.

The biggest thing for me when deciding to include more vegetarian options was to make the decision whether or not I was looking for meat replacements and using them in my current recipes or looking for different methods by which to cook non meat meals.
My husband doesn't like the idea of analogues, so it was more of an effort to figure out meals that aren't centered around pasta and cheese. Luckily, we both like beans, so that's a great option.
We also eat a lot of seafood, which I realize isn't vegetarian, not sure how that fits in for you.

minimalist baker is a great resource for vegan recipes!
probably about half the time I do tacos (weekly meal for us) I do a vegetarian one with beans. The website above has a great recipe for cauliflower tacos, and I just add black beans to it.
in the summer we do a dinner salad once a week, often we keep that vegetarian.
we do eggs as our protein at least once a week (frittata, egg tacos, fried eggs over polenta)
