@Adira: Family meal for tonight! I cooked Egg Roll in a Bowl last night to have for dinner tonight (I like cooking dinner a night in advance). The boys will have it with rice, DH can have it with tortillas for a mushu type experience, and I added shirataki noodles and mushrooms to mine for bulk. Its SOOOO yummy and easy!

Anyone have any good websites/blogs for recipes? I get 90% of mine from Skinnytaste (which I love) but I need to mix it up!

@Mrs D: Low sugar protein shake? Mind sharing the brand? Now I'm thinking I need to go look at mine to see if it's high in sugar. Sigh.

@Adira: that’s super weird but probably what’s going on. I just walked up stairs holding my baby and my legs are burning like I did something crazy. How long did it take you to lose the 30lb?

    (1) How much weight would you like to lose? Time frame?
I haven’t picked a goal weight yet, but the current goal I’m working on is another 14 lbs, then I’ll make a new goal from there!
No real time frame, just keep plugging away.

    (2) How are you planning to achieve that goal?
I started Keto (low carb-high fat) in May. I’ve been up and down with it, but been doing it solid for a couple months now. I’ve lost 48lbs to date (bye bye baby weight!!).
    So Keto mixed with exercise.

    (3) What exercise/diet are you currently doing?
    Keto.
Currently kickboxing once a week, walking with my daughter and doing YouTube walk/dance routines a couple times a week.
I would love to get back into yoga too.

    (4) How are you planning to treat/reward yourself for achieving your goal?
Have another baby? Lol. I was NOT where I wanted to be physically when I got pregnant with my first so I would like to be in much better shape before we conceive #2.

    (1) How much weight would you like to lose? Time frame?
10 lbs by end of year but if I gain muscle then would be happy with just looser clothes and feeling firmer
    (2) How are you planning to achieve that goal?
Reading through these I think I'm going to try Keto. I hate calorie counting so this sounds appealing to try. And then exercise at least 5 days a week.
    (3) What exercise/diet are you currently doing?
    Keto diet
HIIT 2 days a week, lifting/body weight exercises the other 3 depending on if I'm in gym or at home
    (4) How are you planning to treat/reward yourself for achieving your goal?
I think if I'm consistent and see small wins over time that will take a load off mentally and emotionally which is a reward in and of itself. But maybe buying some Athleta clothes since I am obsessed but don't want to buy in a size that I don't want to stay in.

    @hilary: @WinterBee: woo hoo! Welcome more LCHF/Ketoers!

Y'all, I had a "woosh" today (where your weight stalls and then all of the sudden you lose a bunch of weight)! I just randomly dropped another 2 pounds!

    @gingerbebe: I haven’t had a whoosh in a while. 😭
It’s been slooooowwww here for the last couple months. I’m only losing like .5-1lbs every week or so... which I know, I’m still losing. But I lost quickly the first few months, and I’m doing more activity now!

@WinterBee: Take measurements! And make sure you're adjusting your macros as you lose weight!

  17. WinterBee

    persimmon / 1071 posts

@gingerbebe: Thank you! I haven’t been doing measurements (just being lazy), but I can definitely feel a difference and my clothes are loose. But, I’m still at a point where I need the numbers to move as well! I’m terrible with tracking macros, I need to get back into it again.

Ugh, yesterday was not great. We had a meeting at work with provided food and I did NOT eat well. But I'm not going to let it derail me! Back on track today!

@gingerbebe: where are you getting your macro info? I’ve tried macros in the past but get overhwlemed

  20. gingerbebe

    cantaloupe / 6131 posts

@gotkimchi: I use My Fitness Pal. You can input your goals -
like overall calories consumed, plus grams or percentages of each macro (carb, fat, protein). Then you just count the net carbs by subtracting fiber and sugar alcohols.

I figure out my overall calorie count and macro percentages by using an online keto calculator. I usually try to readjust the macros every 10-15 pounds so that I'm not stalling.

That said, some people are really adamant about NOT tracking on keto and eating intuitively and/or doing lazy keto where you just don't count and eat until you're not hungry.

The problem for me is I don't enough fat and end up eating way too much protein, so I am tracking for now so that I make sure I'm eating enough fat every day.

I start potty training tomorrow though, so avoiding the chocolate and wine is going to be HARD.

I stuck to my diet yesterday but also weighed in and hadn’t lost anything more which was disappointing. Anyone have any other great recipes to share? What’s your favorite places for eating on the go? I have to grab lunch out today

  24. skinnycow

    pear / 1728 posts

@gotkimchi: When I eat out I tend to stick to Panera or Starbucks. Panera has nutrition info available and I usually grab one of their salads with a decent amount of protein. From Starbucks I'll grab the fruit and cheese protein box - not super healthy but not terrible either. There are also a few make-your-own salad places here (not sure where you are) so I do that occasionally also.

I feel you on the weigh-ins. I'm only weighing in once a week (Mondays) because I get really discouraged if I don't see movement on the scale..

Edit - just noticed you're doing keto/low carb so not sure how helpful my suggestions will be

  25. Adira

    wonderful pomelo / 30692 posts

@gotkimchi: Probably not the best, but I usually grab a salad from Wendy's and then use my own dressing or no dressing. Their chili might be okay too if you skip the crackers.

  26. WinterBee

    persimmon / 1071 posts

@skinnycow: I’m doing Keto and those suggestions are super helpful, I just don’t eat the crackers in the Starbucks box.

Weighed in today and down 2lbs. 😱 looks like I had a mini whoosh. 1lb away from 50lbs lost and 13lbs from my current goal. Today was a good day.

    Hi all!

I tried something new last month and joined Diet Bet - where you commit to losing 4% of your body weight in a month and you put an amount of money into the pot. The pot is split by the winners of the challenge. I just finished my first bet and I won! It was pretty motivating to not LOSE my $30!

I find packing meals on keto to be pretty easy these days. I just cook up a bunch of meat and throw it in a tupperware with broccoli or green beans, some kind of fat (I like buying the spinach or artichoke dips at Costco - they are pretty low in carbs), some cheese, or Alfredo sauce and nuke it at work Or I do a snack box like cucumber slices, celery, hardboiled eggs, a Babybel, with some fatty dressing.

If I'm eating out, I can do bunless burgers, Cobb salads, etc.
I've found Wendy's is good with a grilled chicken sandwich with no bun, plus a side Caesar with no croutons and use their Caesar dressing. Five Guys will do a burger bowl and you can add all the toppings you want. Subway will do a giant salad for you. Starbucks you can buy these meat and cheese plates. Rite Aid randomly has really stepped up their cold case lately and there's lots of cheese, cold cuts, nuts, and olives right there to grab. I actually got a package of Kerrygold Dubliner slices the other day there. At McDonalds, you can do a McDouble with no ketchup and a side salad, but their dressing is TERRRRIBLE and full of sugar. I would just ask for extra pickles and mustard on the burger. Chipotle is super easy with a salad and guac. Poke bowls and sashimi. Chicken wings - buffalo or garlic parm or lemon pepper is usually safe (Wing Stop and BWW).

Cooking at home, we've done (you can Google these recipes - they're very common)

    - Creamy salsa chicken (your standard salsa chicken with cream cheese)
    - Chicken parm casserole with crushed pork rinds on top instead of croutons
    - Egg Roll in a Bowl (posted above)
    - Crack chicken
    - Mississippi Pot Roast
    - Fathead Pizza Crust
    - Regular ground beef taco night using low carb tortillas
    - Bean-less chili
    - Meat sauce over roasted cauliflower or spaghetti squash
    - Broccoli cheese soup (keto)
    - Olive Garden Zuppa Toscana soup copycat but sub cauli for the potato
    - Buffalo Chicken Dip over salad greens or on celery sticks
    - Tuna or egg salad
    - Any fish baked with a coating of mayo and Parm cheese
    - Any fish baked with pesto with a big salad
    - Chicken breasts pounded thin and rolled with spinach dip, artichoke dip, garlic and herb cream cheese, Boursin, etc.

@gingerbebe: So many good ideas. Thanks for sharing.

We had chicken marsala last night. I just mixed in a ton of steamed green beans for me instead of putting it over pasta and that turned out really well. Hope everyone stays on track over the weekend!

Weigh-in was today for me. I'm down 1 lb! I think I could've done a lot better, but I was eating too many carbs Friday and Saturday. I feel back on track today. If I can lose a pound a week though, I'll be pretty happy.

    @Adira: looks awesome!

    How was the long weekend?

We ate out a few times. I had sashimi at the sushi buffet, a meat and cheese packet for a picnic with my kids, and had CFA grilled nuggets over a side salad and I brought my own dressing cuz I'm hella extra. I also had dinner guests and made pizza one night and pasta another night, which helped me get a looooot of carbs out of my pantry!

I did a meal prep of burger and breakfast sausage pinwheels - the pics are below. You're basically get half a pound of bacon, line it with a pound of ground meat and 4 slices or ounces of cheese, roll up and bake at 350 for 45-50 minutes. Cool and slice. Easier than making sausage or burger patties every day!

I also made cheese crackers - take a slice of cheddar or pepper jack, cut it into 16 squares and bake for 9-10 minutes at 375 until brown and crisp. Zero carb snack and crunchy!

Down another .8lbs but I'm on my period and bloated so I feel blah.

New thing I tried this weekend was birthday cake Quest bar - really good! Even my husband liked them.

Wowza, I need to get back on the bandwagon. I've put on some pounds that I knew were there because of the way my clothes were fitting, but seeing the number on the scale put it all in perspective.

We have a wireless scale, it sends the weight right to my weight watchers account so it's super easy to know exactly where I am at any given point.

I usually stick to healthy eating during the week and then go nuts during the weekend but I did okay this weekend! I ate out Saturday night but my rule is eating out 1x/week so I stuck to it. I couldn't resist wine, though, and had it Friday and Saturday night. Whoops.

I've only lost 0.5 lb since last Monday but about an inch around my waist.

@skinnycow: I have wine a few nights a week too - but the trade off is that I measure it! 3-4oz of red wine or if I want more volume I make a white wine spritzer with La Croix usually does the trick.

Oh, I made a really yummy thing this weekend I forgot to post about. Creamy green enchilada chicken in the Instant Pot! (You can do it in the crockpot too!)

I put 1 package of chicken breasts in the IP with half a block of cream cheese and 1 cup of green enchi sauce. Poultry setting (15 mins high pressure) and then once its done, drain off half the liquid and then shred/mix everything together. I used it to fill a low carb tortilla, topped with a little more sauce and cheese and broiled it and it was SO stinking good. I also ate it a second time using a cheese shell taco (just get some shredded cheese, put it in a frying pan over medium heat until its brown on one side, add filling, fold over like an omelet, and then remove to a plate to cool/firm up for a few minutes. I pried mine apart while it was cooling and filled it with shredded lettuce and hot sauce and it was soooo good.

Its not any different than your standard salsa chicken, but the green enchi sauce was so delish here for some reason.
