@gingerbebe: have you had Mary's Gone Crackers? They are nut/seed based...they have been life changing for me...from a no bread, crackers, gluten perspective!

  2. gingerbebe

    cantaloupe / 6131 posts

@Mrs D: I've had them in the past, but they are currently a bit too high in carbs for my diet. The cheese crackers I make are super crunchy and delicious, and I've been making these really easy flax crackers lately.

Its just 1 cup of ground flaxseed meal mixed with whatever seasoning you like, a tablespoon of apple cider vinegar (its not discernable in the final product, it just kinda rounds out any grassy/bitter flavor in the flax) and 1/3-1/2 cup of water (just enough to get a dough). I roll it out thin between two sheets of parchment, score it with a pizza wheel, and bake it at 275 for about 45 minutes to an hour or whenever they get crisp. (You want to leave the parchment on top so it doesn't over brown). They basically have no carbs because its all fiber and they are crispy and hold up well to dips and what not. Its basically a homemade version of Flackers, but way cheaper.

@gingerbebe: That enchilada looks delicious!! I need to expand my recipe book to some of these ideas!

Down 0.8lb, not great but I’ll take it because I did have a crummy weekend. Doing well this week so far! I’m going to be making the enchilada chicken tomorrow I think

  5. gingerbebe

@gotkimchi: awesome! I'm on my period this week so I'm bloated and up a few pounds so I'm like blah. I know it will go down next week but still annoying!

@gotkimchi: Down 0.8 is great! Especially after a crummy weekend!!

@gingerbebe: Ugh, I hate that! Next week will be better.

@gingerbebe: Um that recipe is brilliant. I am totally going to try this because it's just so hard to give up all of the bread-y things!

You guys, I’m down 6.5lb total but I feel like nothing is even fitting better! How much weight did you have to lose to really notice?

  9. Adira

    wonderful pomelo / 30692 posts

@gotkimchi: I think it probably depends on how your clothes fit in general AND where you're losing the weight. For the most part, I didn't notice a change in how shirts fit me until I had lost like 15-20 lbs. Pants were the biggest indicator for me in that they went from being too snug, to feeling comfortable, to being too loose. But that was when I was much heavier. I've been wearing the same clothes since April and fluctuated 6-7 lbs and haven't noticed too much of a difference in how my clothes fit. Only certain pants start to feel snug when I'm in the higher range, but other pants feel the same regardless of where I am.

  10. gingerbebe

    cantaloupe / 6131 posts

@gotkimchi: I think at 10lbs I was like okay, its not just water weight. Time of the month also is a factor - like now, I'm down 15 pounds from my start weight and its my period this week and I feel like a distended whale. Drinking a lot of water helps because if you're not drinking enough water, especially on a low carb diet, your body clings to that water weight hard. Low carb diets also require a lot of salt for that electrolyte balance, which again, makes your body want to hold water.

@gotkimchi: The rule of thumb I use is that a size is about 8 pounds.

  12. Adira

    wonderful pomelo / 30692 posts

@looch: I think it must depend on where you are on the scale. I lost 30 lbs, but only dropped two sizes.

And just to be transparent, I was 190 and now I'm 158. I went from a dress size 14 (16 in most pants) to a dress size 10 (12 for pants).

  13. gotkimchi

    nectarine / 2400 posts

Thanks everyone for the info. I will push water because I know I’m bad at that and hopefully in the next few pounds here I start noticing a difference

  14. looch

    wonderful pear / 26210 posts

@Adira: Yes, agreed and I think it's actually better to use percentages.

I started at 159 in size 10 pants being snug and by 150 I was in size 8 pants.

  15. skinnycow

    pear / 1728 posts

@gotkimchi: I also think it depends on how you carry your weight. I've fluctuated anywhere from 125-145 the last few years and I've never needed a different size pants because I gain/lose everything in my butt and thighs and not my waist.

    kiwi / 598 posts

Agree with everyone about weight distribution. At ~135 lbs. I was also buying size 8 pants, but I am pretty thick around the middle with no hips/butt. I'm down about 5 lbs. but doubt I could fit into anything smaller.

Just got back to this thread for the first time in almost a week, you guys are so motivational! I didn't have a great past week due to medical issues, and the scale shows it, but I'm ready to jump back in! (metaphorically, I'm not quite up to jumping yet, lol!)

  19. gingerbebe

    cantaloupe / 6131 posts

@Rocker2014: health issues and diets don't mix! No shame there!

I did some meal boxes last night for easy meals for myself so I don't have to worry about lunches or trying to think of family meals that I can eat all the time. I made 3 roast beef, broccoli, and cauli mash meals, two unpictured boxes with chicken wings and jalapeño poppers to have with celery, and I steamed a spaghetti squash for the next time we have pasta night.

Officially hit 50lbs lost (51lbs currently). I’m 11lbs from my next goal.
I’m going to look into IF for next week, any tips?

  21. gingerbebe

    cantaloupe / 6131 posts

@WinterBee: Woo hoo! That's awesome! I know a lot of low carb/keto folks intermittent fast, but I am so bad about snacking at night! So far for November, I made it a goal to do Bulletproof-style fasting 4 days a week where I have a Bulletproof coffee in the morning for breakfast since its not supposed to affect your blood sugar or fasting state, then I eat my first real meal at 130pm, then dinner around 6pm. I still snack in the evening, but I've found just doing this kind of modified fasting really helpful in determining when I'm genuinely hungry and when I'm just eating out of habit. For instance, some days, I don't eat until 2 or 3pm because I'm just not truly hungry. I've also gotten better about stopping mid-meal or even mid-bite if I realize I just really don't want this.

Down another 0.8 today! (I don’t have a scale at home so can only weigh in on days I work) that makes 7.2 since 10/31! Just got to stick with it because I have a long ways to go. Packed chicken enchilada lettuce wraps for work today

    @gotkimchi: That's awesome! Great job!

My period is finally over and I lost the shark week bloat PLUS it looks like I'm also down another .8 pounds! Woot. I was getting so annoyed at looking puffy all week in my belly.

What are everyone's plans for coping with Thanksgiving? Planned cheat day? Cheat meal? Special dinner of your own? Share your tips!

  24. gotkimchi

    nectarine / 2400 posts

@gingerbebe: for thanksgiving I’m thinking cheat meal because we do lunch. I’ll probably have coffee for breakfast as usual and then pick what I feel like for lunch. It’s interesting that bread has lost is appeal for me so I’ll probablh have turkey, sides and a bite of potatoes. My appetite is also way less so I don’t think I can consume how much I was eating before anyways

  25. catgirl

    nectarine / 2018 posts

@gingerbebe: we are doing Thanksgiving at home just the three of us and I am cooking, so the meal will actually not be that unhealthy. More calories than I would usually use on an individual meal though. Dessert will be the real treat of the day - I plan on having whatever I want for dessert but only on the day itself. Other meals of the day will be our normal food.

    (1) How much weight would you like to lose? Time frame?

Overall, I need to lose 80lbs. I’ve lost about 35lbs so far. I’d like to make that 45 before the end of the year, but I lose fairly slowly so 5 lbs is more realistic in that time frame.

    (2) How are you planning to achieve that goal?

I’m working out (boot camp 2 days a week and personal training 2 more days a week), and tracking my calories (about 1,500 a day not including exercise calories). My personal training and bootcamp are ending soon, so I’m really worried about keeping up my exercise levels. During the holidays, I plan to walk, but the weights at the gym and yoga.

    (3) What exercise/diet are you currently doing?

Trying to do Keto, but it’s hard for a vegetarian. Mainly trying to stick within my calories eating Whole Foods and limiting carbs.

    (4) How are you planning to treat/reward yourself for achieving your goal?

Not sure yet. I don’t want to buy lots of new clothes since I have a long way to go til my goal.

@WinterBee: how many hours are you fasting/eating on Keto? I’m struggling to get my eating time down.

@gingerbebe: we’re weight loss twins! I also need to lose 12-13lbs to be in onederland for the first time in at least 7 years. I’m trying Keto, but it’s hard as a vegetarian.

  27. gotkimchi

    nectarine / 2400 posts

@Crystal: do you eat eggs? Any fish or chicken? I don’t care for cheese/salami which is what my sister always eats on Keto but it’s been easier then I thought. I always have coffee with heavy cream in the morning, sometimes eggs/cheese + bacon. Could have eggs/avocado. My appetite is a lot less now so that will typically keep me full for a long time. If I need a snack I do nuts. Lunch I usually do a salad with cheese and full fat dressing. Dinner is where I typically eat meat but you could a salad, veggie stir fry with or without eggs. If I didn’t eat meat I think I’d be eating a lot of avocado/cheese on top of cooked or raw veggies with different sauces. I try to “eat” between 9-6 with the exception of my coffee which I have when i wake up

@gingerbebe: I started doing BPC a few weeks ago. I really like it, like a creamy latte. As for thanksgiving, I’m Canadian so we already had it, but DH and I affectionately refer to it as cheatsgiving. We didn’t go crazy but we weren’t strict either. We’ve chosen this as a lifestyle and don’t mind going off track now and then for special occasions, I’m just happy I got right back on the wagon! First diet I’ve ever been able to do that with.

@Crystal: I just started fasting today! I’m starting with 16/8, then hoping to work to 18/6. Unfortunately I do not really have an IF tips as of right now, but ask me again in a week and I might?
During the day it won’t be that bad, but I definitely like night snacking, that’ll be the issue, that’s also why I broke my fast in the afternoon.

I think I have hit my wall again... ugh. It seems as though my body has a cycle. Within 1 week I drop 3-4lbs, then the following 3 weeks I struggle with the same 1-2lbs going up and down. I know 4-5lbs loss/month is still good, but when you still have 50lbs to lose, it can seem like a lifetime.
Like I mentioned before I’m going to try IF and see if that makes a difference, I’ve been getting lazy with tracking my food, so I’m going to start doing that again.

  29. gingerbebe

    cantaloupe / 6131 posts

@Crystal: yeah if I was a vegetarian I would be eating a lot of dairy and eggs and avocados. I have really been liking Trader Joe's roasted salted macadamia nuts as a good fatty treat, especially when paired with some Lily's sugar free chocolate! Bulletproof coffees for breakfast really fill me up and salads with fatty dressing, eggs, and sunflower seeds could be an easy lunch you can get anywhere. Some people I know make iced coffees that use protein shakes as creamer (Premier brand ones are super low carb) or I like Orgain chocolate fudge, if you're having problems with protein.

For Thanksgiving, I'm hosting my family. They are really stressful so I'm not super excited about it and hope it doesn't trigger binging. I'm having a friendsgiving tonight and Im making a lot of keto sides for myself to eat tonight and on a Thanksgiving day. I made a keto broccoli casserole, I'll have turkey and cauli mash, and I made some keto dessert for myself (a pumpkin cake and a lemon raspberry cake). I'll make some bacony Brussels or green beans if I need more. I'll have flax crackers and dip them in spinach artichoke dip, cheese, and nuts for appetizers.

@gotkimchi: i do eat some eggs and am expanding my horizons with fish. I’m trying to stay away from eating too much fake meat. Thanks for sharing your meals, I’m going to stock up on nuts!

@WinterBee: good luck! I’m trying to wait until 9am to eat breakfast, but that’s really hard when I wake up at 5:30am to hit the gym before work. I get hungry some days! I try to stop eating at 7 (...except for today. It’s 7:45pm, and I’m sitting on the couch eating almond m&ms, lol). 4-5lbs is a really good amount to lose per month! I’m with you, though, it feels like it’s taking the weight for-ev-er to come off.

@gingerbebe: how is bulletproof coffee? Is it oily? The macadamia nuts sound really good! I never thought of using protein powder as a creamer, that’s genius. I even have some
Orgain at home right now! Sounds like you have a good eating plan for thanksgiving. Do you have a quiet space you can avoid your family or someone to run interference?

  31. gingerbebe

    cantaloupe / 6131 posts

@Crystal: Bulletproof coffee, if you blend it in a blender, doesn't really taste oily. It tastes creamy. Like a rich latte. I do Bulletproof style fasting a few days a week which is where I drink a Bulletproof coffee for breakfast and that usually keeps me until 130pm when I eat lunch. Then I eat dinner. If I get hungry before that, I have a piece of cheese and another cup of coffee (but just a normal one not a super fatty one).

@gotkimchi: @gingerbebe: Woohoo for 0.8 lbs down! That's exactly how much I lost for the week! Although I ruined it yesterday during Logan's birthday party by eating pizza and cake!

@gingerbebe: Thanksgiving is always a planned cheat day for me.

Down 1.5 lbs this week which I'm really happy about! Especially because I had wine 5 days last week... I fit it into my calories counts, so whatever.

Thanksgiving is a planned cheat day for me also. I'm just planning to not go nuts and take it easy on the dessert.

I start prepping mentally for the Thanksgiving meal this week, in fact, I already started with dinner last night, by refusing a piece of pie that just wasn't worth it.

Morning of, I eat a good breakfast of 2 eggs and a ton of vegetables to fill me. I don't really care for the food, but the desserts are my weakness, so I allow myself a small piece of whatever I want and then call it a day. I don't bring any leftovers home if we're eating out and I send them all home with others if I am hosting.

  36. Rocker2014

The thanksgiving meal isn't really a concern for me, because I have a ton of food allergies and we always have it at my in-law's home and they could not be less allergy friendly if they tried. I always have epi-pens handy when I eat there, so I never really enjoy the food.

BUT. DESSERT. I have a fabulous sister in law who tries to outdo herself every year by making the most amazing dessert that is safe for me to eat -- usually some kind of pie, which is my favorite and usually completely unsafe for me. I think I'm just going to accept that it will be a cheat day and enjoy!

Also, my in-laws are religious so no booze, which will save some calories...

We had Friendsgiving last night! I ended up sorta doing a "one meal a day" type thing (some of these intermittent fasters have the tiniest eating window and just eat one huge meal a day!) I had 2 cups of coffee with cream in the morning and didn't get a chance to eat because I was chasing a sick toddler while feeling sick myself. I had a small snack of sugar free candy (ha!) in the afternoon while I was cooking dinner and then decided I'd just save the rest of my calories for dinner.

My friends ended up bringing over a meat and cheese platter (and crackers) and I put out pimento cheese and spinach dip. So really low carb friendly appetizers for me. I also had turkey breast and the keto-friendly broccoli casserole. I also had some cocktails (Diet Snapple Half and Hal, which is like an Arnold Palmer, mixed with bourbon and lemon juice) while everyone else had beer and sparking cider, and I had half a slice each of my pumpkin and lemon raspberry dessert while everyone had sweet potato pie. I didn't feel deprived and I liked how I could relax and not worry about my calories because I'd saved them during the day.

So I think I'll use the same strategy for Thanksgiving day. Have a fatty coffee in the morning, get distracted with cooking, and then just eat Thanksgiving dinner with my prepared foods. I think I'm going to make some bacony green beans and a salad to go on the table too.

    Happy Monday!
