Hmmmm... soup?
Tomato sauce, ground turkey (or shredded chicken), black beans, corn, and taco seasoning!
You can add way more but I kept it to 5!
(Chillies, sour cream, tomatoes, onions, tortilla chips, cilantro, etc.)

Baked chicken breasts and steamed veggies. My favorite easy way to bake chicken is in an 8x8 glass dish. Put in chicken, pour Ken's light ceasar dressing over, bake at 350° for 40 minutes or so. It is seriously easy, but tastes really good.

Lots of chicken dishes that can be done either in the crock pot or the oven... cover w/ salsa and cook till pull-apart tender, then grab some tortillas, shredded cheese, other toppings, etc. Or cover chicken w/ one jar of apricot preserves and one thing of Russian salad dressing.
Fish recipes can be really easy- I liked tilapia covered with a thin layer of dijon mustard and then coated in crushed up pecans and then sauteed till done.
I also have a couple cookbooks by Nigella Lawson that have lots of recipes with very few ingredients.

@MsLipGloss: @bao and you can buy dough pretty much anywhere but walmart and trader joes have dough in the refrigerator section you can buy. You just have to leave it out on the counter for 20 minutes or so to let it warm up and then roll it out and easy dinner! I also make calzones and breadsticks with it.

Salmon with a honey Dijon dressing.
My mom gave me a great cookbook that's 5 ingredients and 15 minutes. I think it's by cooking light. I really like a lot of their recipes and they include side dishes too.

Chicken breast, pour salsa on top, top that with cheese (and add any random veggies that you want to get out of the fridge: tonight I dumped on some mushrooms) and bake in the oven. 30 minutes at 400 seems to do the trick.
Serve with rice.

Roast chicken is easy! Buy one of those roaster chickens and place in a pan with baby carrots, mushrooms, celery, onions whatever you like. Pour about 3/4 of a large container of chicken stock over. Season everything with fresh garlic, salt, pepper and rosemary. Cook according to the chicken package. Best thing is leftovers for sandwiches or a soup the next day!
