DH always requests these chicken nuggets. They are really good! And I totally suck at cooking (spaghetti with meat sauce is a gourmet meal in our house), so these should be a piece of cake for you to make!

At my house, we're obsessed with the Chicken and White Bean Enchiladas. http://www.skinnytaste.com/2010/06/chicken-and-white-bean-enchiladas-with.html
I also really like the Sweet Potato Turkey Shepherds Pie! http://www.skinnytaste.com/2012/11/sweet-potato-turkey-shepards-pie.html
I have been really happy with all of her recipes, though. Haven't had a bad one yet, and I've tried a LOT.

@lawbee11: Those look awesome, and easy enough!
@Smurfette: Where do you buy your crab from?
@littlebug: That sweet potato sheppards pie looks AMAZING

@swurlygurl: I buy the jumbo lump crab from Publix. It is in a container in the seafood section. I think that it is an oz less then the recipe calls for but it enough. DH says that they are the best ones he has ever had. I hate when you get them at a restaurant and get more breading then crap.

We've been making her recent sweet potato chili recipe around here lately. It's sooo good and perfect for fall! I up the spices and replace water with chicken broth though. Yum yum!!

I honestly have never made anything from her that I haven't liked, although I do alter things sometimes, like using stock instead of water or upping spices. And I love butter.
But we love the

Butternut Squash and black bean enchiladas
White bean and chicken enchiladas
Butternut Squash and spinach lasagna rolls

I'm looking forward to trying out these recipes! I'm kinda torn right now - the pumpkin cupcakes w/cream cheese frosting turned out pretty yucky even though I followed the instructions to a T, but the chocolate chip cookies and fiesta rice were pretty good. I might give a few more recipes a try
wonderful cherry / 21504 posts
@pinkcupcake: I've made the pumpkin cupcakes and they came out great! Are you sure you used an 18 oz box of cake mix? I've even halfed the recipe and used the cheap little Jiffy box mix.
I love the pumpkin cupcakes and the turkey pumpkin white bean chili. Not really spicy but really comforting. Also have make the shepherds pie (have one in the freezer right now). When it's warmer I like the peanut noodles recipe, but I made it in my first trimester and felt really sick and it turned me off. Stupid morning sickness ruining things.
