DH is out of town through Thursday, and I'm trying to think about what I can cook that won't have tons of leftovers. Even when I cook for just us, I usually make enough for 4-6 servings. Obviously, I could just half stuff, but I feel like it's wasteful because then I don't use up my ingredients. Usually when he's out of town I eat a lot of cereal and take-out, but I am trying to eat healthy and not overspend. Any ideas?
