spinach, spring mix, chick peas, my husband loves red onions, I would stay away from nuts in case of allergies!

@regberadaisy: Good thing you mention that, one of our guests does have allergies...he is allergic to beans I know for sure, but not sure what else...thanks for reminding me to consider that!

Onions, tomatoes, cheese, croutons, olives, hard boiled eggs..... that's all I can think of but it's a start!

My new fave salad is the ready made Pesr Gorgonzola. I find the dressing a little too wet so I add sliced apples, extra spinach, and for more color pomegranate seeds or craisins.

I'm currently obsessed with spring mix, spinach (I love extra spinach), craisens, walnuts, feta cheese and balsamic vinaigrette. Definitely doesn't work if there's a nut allergy, though...

I like to do "Olive Garden" salad when we have guests - red onion, black olives, tomato, banana peppers, croutons, and romano cheese... though shredded cheddar is yummy too.
My favorite salad is not healthy and not everyone loves it, but easy - Caesar!

My husband makes our salads, he is great at it! We have:
Lettuce, cucumbers, onion, banana peppers, croutons, parm cheese, bacon bits and I'll get tomatoes if we have them in house.

Daily for work- hard boile egg, chick peas, sliced pickles (thanks @Rubies.... best idea ever!) hemp harts and goat cheese.

I like to change up my salad every now and then and will make it more on the sweet/sour side. I top my spinach with granny smith apples (thinly slice), golden raisins, sliced strawberries, walnuts/almonds, chicken breast, and a homemade balsamic raspberry vinaigrette. Plus, the colors makes a beautiful salad presentation.

Cucumber, avocado, cherry tomatoes, a little arugula, fresh mozzarella balls and crushed pita chips.
Or, toasted pecans, pear, blue cheese crumbles with a cherry balsamic dressing - SO good!!

Blueberries, raspberries, strawberries, and walnuts with poppy seed dressing or strawberry dressing is a goto when we have guests.

I have a few that I like to rotate for guests, or picnics/potlucks:
A good spinach salad with sliced strawberries, toasted pecans, goat cheese, and poppyseed dressing.
A BLT salad with wilted greens (spinach and kale), diced cherry tomatoes, marinated tempeh, and a honey mustard dressing.
Another salad I like to make when it's warm outside is a mixed green salad with red onion, mandarin oranges, and smoked tofu with an island soyaki dressing.
You can always substitute meat instead of tofu or tempeh. We're not vegetarian, but I really enjoy both ingredients.
