My SIL is coming this weekend and I am trying to figure out foods that her and my kids will eat. Tacos fit the bill. But usually we eat tacos and that's it no sides
What sides should I make? I need 2 ideas please~

We normally eat tacos just plain, but chips and salsa/guac would go great with it! Or rice and beans??

I usually do beans (either refried or black beans) and a rice (Mexican rice w/peppers and onion?).
We had tacos last night, with rice and beans.

I usually do pinto or black beans and Mexican rice. Also do chips and guac!

@Mamaof2: refried or black beans. We had people over for a football game and provided the tacos and fixings. Our friends did black beans, with a little pico (he made) mixed in, and it was really good!

Refried or black beans.
I'll do bowls of all of the toppings, too to make it easy. Bowls of:
Meat
Cheese
Lettuce
Tomato
Cilantro

We normally do just the tacos and some chips in case you want to make nachos or a crushed up taco salad.

Ditto on just serving tacos usually but I think chips with guac and/or salsa would be good. Maybe in lieu of sIdes you could look at it more as appetizers that you leave out through the meal? Bean dip and queso come to mind. Corn on the cob could be good too.

Pinto beans
refried beans (rarely)
Caesar salad
Spicy cabbage slaw

I'd just make a batch of rice and add salt, lime juice, cilantro, black beans and frozen corn to it - one stop shop.

I like to make corn and black bean salsa with Mexican food. Plus guac and chips!

The most amazing, bestest, yummiest corn ever.
Heat up frozen corn in a frying pan with butter and lime juice. So easy. So amazing. You'll never eat corn the same way again.
Seriously though. We had it last night with enchiladas and my husband said (again), "I can't believe we never knew how good corn is with lime on it!"
If you want to get fancy you can use a recipe for "esquites": http://www.closetcooking.com/2012/08/esquites-mexican-corn-salad.html

@Mamaof2: I'm tellin' ya! Do you do hard or soft tacos? And how old are your LOs. My DS is 19 months and I have to deconstruct the tacos. He won't take a bite of it whole but if it is finger food sized he'll eat it.

@.twist.: DH said that he opened the can of black beans and just just put some pico in the pot and then heated it up on the stove.

@travellingbee: hard - yes I break them in half and they eat them open faced
I didn't even think if hard vs soft - should I get both???

@Smurfette: and you mix it with the rice? What is yellow rice? It all sounds delicious. ahah

Usually chips with either salsa and/or guac and/or bean dip. You could also do mexican rice?
GOLD / wonderful coconut / 33402 posts
@.twist.: You can serve them separate. But I like to put some black beans on top of my rice sometimes. This is the rice we usually make. Can find in the Mexican food section of the grocery store or with the regular rice.

@Smurfette: Thank yooooou! I am always looking to expand my mexican night menu!

@Mamaof2: @.twist.: It is so good! Yes it tastes different, since it has flavoring in it.

I just make mexican rice. Sautee onions and rice, add a can of diced tomatoes, chicken broth, and enough water (2 cups or so to 1 cup rice) and cook down.

@blackbird: Do you think this would work in a rice cooker too? I fail at making rice any other way. lol
GOLD / wonderful coconut / 33402 posts
@Mamaof2: Nope. R loves it. But I think they make a spicy version.

@Smurfette: oh good - my kids love white rice - hope they like this too!
